Crumb Coating a Cake with Ganache

In this tutorial you will be shown how to successfully level the top of your cakes, fill, stack and crumb coat with ganache. Giving you a cake ready to be decorated however you wish.

I note that you did not put a cake card/board in between the 2nd/3rd layers. In all other turorials I have seen for double barrelled cakes they put a board in ( and most use dowels too) for support. Do you not think this is necessary or was this for demonstration purposed only?

Should I leave ganache for over night in room temperature
