I have the flu and just laying around and turned this on and while I am not interested in eating right now, it calmed me into resting and sleep was needed. YOU didn't put me to sleep, you calmed me. I had to back it up and watch it. I just love these videos. I don't like fish but love dates. Mom always made a cookie with dates and nuts in it (walnuts) and I am going to make that this week when I get better. thank you, it is truly a blessing to watch something from good people

thanks, they made me go to doc and this is day six and they said do what I am doing, home canned soups/herbal teas and rest...and don't go back till Friday at work so this has been a doozy...but turning the corner on it. Unfortunately hubs is coming down with it now. I was forced to get a doc note. I think if we didn't push this doc note stuff, wouldn't spread so much, because I was there for my routine blood labs and around lots of coughing people two days before I cam down with it. So copay later and no meds just my homemade soups and teas to cough at home. I was well stocked with canned soups. And had homemade frozen bead in roll form that I took out and thawed. Did not have to make hubs forage for food with my pantry in place. Another preparedness tip if ever, when you aren't up to cooking.

Hi Dale. What a thoroughly nice channel! You have such a relaxed attitude and presentation style , a voice like warm treacle, and a lovely little cabin. "Slow TV" at its best. This is the second time you have popped up in my recommended viewing, and I'm glad I took the recommendation. If you ever get a chance to try fresh dates, prepare for ecstasy. They are soft, sweet, and gorgeous. I am gifted with a small greengrocer's shop, just around the corner, that sells them. I live on the coast, and used to fish a lot when I was young, and agree with you 100% about haddock and pollack. Whiting is another greatly underrated fish. Most of our catch is exported to France, where it is rightly recognised.. Best wishes from the UK, and thank you for sharing your "night out" with us. I look forward to watching more of your videos. :o)
@DaleCalderCampobello
@DaleCalderCampobello 6 жыл бұрын
Thank you I've heard of Whiting but I have never seen it here. Fresh dates do sound very good. Somewhere in my travels I walked under a date palm and there were dates on the sidewalk, Spain maybe.

Love date squares - on the opposite side of the country there is a little shop on my way up to Whistler that makes a great date square along with my earl grey tea...mmmm, I enjoy honey dates, a great alternative to chocolate if you have a sweet tooth - funny i was at Costco today and looked at the fish but everything said it was a product of China, shook my head as being on the coast of BC there should be something local - mind you it wouldn't surprise me if the fish is caught here and sent over there to be processed - an easy way to convert C to F just remember take the Celsius double it then add 30 to it to get the Fahrenheit IE - 20c x 2 = 40 + 30 gives you 70F - it is close enough (actual temperature would be 68F)

Just found your channel. Where are you? Somewhere in eastern Canada? We are on our working farm in central NH. Got a fair amount of snow yesterday and kept our Home Comfort kitchen wood stove going! I am also more partial to Haddock than Cod for your stated reasons. I had a wonderful farmstead on Annagance Ridge in NB ( Cornhill next town) Enjoyed living in 1935 back in 1974 :-) Love your stove! Grandma Hazel used salt pork. She would buy a whole small Haddock and wrap the head in cheesecloth in order to make a lovely fish stock. Gram made a date custard pie. Never saw anyone but her make one. A lot of work. Her maiden name ( and my middle name is Ried) Scottish :-)The view from my woodland kitchen window is the same as yours. All the best!

Love fish chowder and make it very similar to yours! Fish Chowder happened to the favorite of the late JFK even more than New England Clam Chowder. I use wild caught cod for my chowder since Cod is so prevalent here on old Cape Cod. Have you ever had New England Boiled Dinner...that's any kind of your favorite broiled fish, boiled potatoes, steamed cabbage and steamed carrots, butter, salt and pepper to taste. Very simple, inexpensive and healthy. Similar to Irish Corned Beef dinner only with fish instead! Stay warm and enjoy as always~ thanks for sharing life during a typical N'or Easter!

Thank you Brenda we have a similar fish dinner either made with dried fish or corned fish (salted) with potatoes, turnip and squash. Sounds like a good idea for a dinner art the cabin, Thank you .

Hi Dale. Love watching your winter cabin vids. Thanks for sharing. Ive noticed you refer to (in your vid cooking the fish chowder), evaporated milk as condensed milk. Im in Louisiana and we consider condensed milk the thick sweetened milk by carnation. The evaporated milk is the one with no sugar and thinner. What are your thoughts? Keep cooking and stay warm!! Dale, I have to comment!! I am a Maratimer out in Calgary for 4 years. Once in a while I get lonesome for the woods, and like to watch a cabin video. Today I was feeling especially home sick. Found your video at random. Found your accent very comforting and low and behold you are from Campobello, I am a Grand Mananer. So funny!! Really nice video. Im going to have to make some fish chowder this week. Cheers!

I made your delicious fish chowder, but added some fresh flat-leaf parsley at the end. It was perfect for a chilly late-winter evening in Wisconsin, US. It will be so easy to keep the ingredients on hand to make this dish any time. Next I will be making your Blueberry Grunt (with the maple whipped cream, of course).

I was really glad to get your fish chowder recipe. Can't wait to make it myself. Really anxious to try evaporated milk instead of cream. By the way, I was a cod lover until I heard your story about the locals aversion to cod for obvious reasons. I grew up in Minnesota. We avoided perch! They were avoided because of all the small bones. We through them back when caught! Now they are on menu's in restaurants in many states!

Hey Dale. Back in NJ, we used to go to the Jersey shore and back there, the best fish was deep sea caught bluefish or mackerel. The flat fish were usually called flounder. The doormat sized ones were called fluke. In Lavalette NJ we fished off the piers and caught baby bluefish, called snapper blues. They were caught by the bucketful and frozen. The whole fish was deep fried, even the heads. We grew squashes and fried the batter dipped flowers in with the fish. Oh, happy days.

What you call condensed milk, we call Evaporated milk. Condensed milk here is thick and quite sweet. In fact, one can make a candy of it by slowly cooking it down until it's very stiff. I use my slow cooker instead of hanging around the stove for hours and frequently stirring.

I suspect that the date squares may well be a Canadian dish. My mother, who grew up on a farm 18 miles from town in the 1920's and '30's in Saskatchewan was a big fan of these. During the time that she was growing up, about all the fruit that would be available in the winter would be either fruit that you had preserved in the summer (Saskatoons mostly) or dried fruits . Seemed like dates and raisins were mostly what they had available. At least, I must say that dates and raisins featured prominently in the deserts that she made.
