Hi Sean. Not sure you’ll see this, looks like you already checked comments. Hope you’re feeling better. You look like you got some sun. My sourdough starter is having a slow start. I think it’s a temperature issue. I have the same stove you’reusing. It is gas. I bought an extra shelf so I could bake six loaves of bread. The bread pans just fit in. I give away and freeze my bread. Before my knee surgeries I baked almost every week. About 30 yrs ago I made up my own recipe. I was lucky to find a copy i happened to write down because i usually baked from memory. Now I’m aNxious to bake sourdough again. Hubby bought me a big black, speciality, cast iron bread baker: oval, flat bottom, dome lid, two off set ‘u’ shapped handles, pricey. Take care. Your cabin is coming along nicely. Great progress on the solar system Sean. Oversize plates are the Best! Oscillating saws work well for cutting out outlets and remodeling outlets are good if sheet rock is already installed. What is your walk space between your refrigerator and the stove?

Get a box extension sho you can put cover on flush. Don’t use longer screws. Simple fix. We do it all the time for cabinet outlets.

Just make a hole in the exterior wall with a big revolving door. In the winter, you can just spin the whole refrigerator so it's outside and spin it back inside to get food out. No power is needed. In summer, spin it inside and leave it and power it with the solar. 😂

My dad used the shell of a window ac unit to make a cold box that we used in the winter in Michigan opened only from the inside but hung outside the window and kept things cool and then cold depending on the weather

I'd rather install a vented heater in a first place and had woodstove as complementary heat source. Vented heater is inexpensive, easy to install and almost hassle-free.
