The Jolof Empire (French: Djolof or Diolof) was a West African empire that ruled parts of Senegal, Gambia and Eastern Mauritania from 1350 to 1549. Following the 1549 battle of Danki, in this period it is known as the Jolof Kingdom which was defeated in 1875 by the French and the former Jolof divided up into three countries, Senegal , Gambia and parts of present day Mauritania. Whenever you hear a Senegalese or Gambian person refer to the word Jolof, they are referring to history , or to businesses or schools or neighborhoods named after this empire that dominated present day Senegal and Gambia. Especially in Senegal 🇸🇳, we are completely unaware that people are fighting over food named after the Jolof empire, most likely , this dish was introduced to other parts of the West African region by Jolof Jolof merchants. By the way , I am a Jolof Jolof myself by last name and ancestry.

The original jollof, not a lot oil or tin tomato, just pure natural ingredients and traditional African cooking. We all just gather around the wide tray in the middle and eat!! Great memories!! Jollof rice competition annually takes place in Ghana and The Gambia always go with the biggest price. Senegalese Jollof looks good but too much of oil.

The reason the Senegalese version had too much oil is because recently, maybe two generations ago people didn't use much oil because it was expensive. It later became a status symbol to use a lot if oil. The same applies in Gambia especially among the Wolofs, since it is their dish, although most Gambians and Senegalese eat the same food regardless of ethnic group. Each ethnic group has a main dish or several.
