Wood for the taste, gas for the convenience, either way those pizzas get eaten because they both look really good.

I have used both. I will always prefer the wood version. Can not duplicate its taste or authenticity but the gas option will always be cleaner, efficient, and more reliable. But I love the whole wood burning smell and theme. Great video.

Gas is not as clean people often imagine, though. It makes benzene (which gives gasoline its characteristic odor) and particulate matter (the primary carcinogen in cigarette smoke) and carbon monoxide and nitrous oxides (which cause asthma, are potent greenhouse gases and pollute out waterways and can contribute to eutrophication among other things). Wood makes a number of things like that, but in quantities and in ratios and balances we are made to process, and also doesn’t really make benzene.

Thumbs up for Vito! I like the gas for pumping the pizza more, but I think WOOD is best due to taste and if it was hotter, it would have pumped up more. Gas is probably more consistent and easier to maintain.

Dear Vito, I’ve never worked a gas oven but the video has given to me a very good sensation. In this moment I need to decide if a gas burner will help me to keep the same temperature in stone during the night. With wood is difficult when you have the stone completely full of pizzas minute by minute. Alexis has helped me too much with his tips, I have changed the wood also to create more flame but I need more space inside the oven. Next one, a mixed oven! Thanks so much, Silvia

I gave my friend yesterday a piece of crust from pizza made in a gas pizza oven, he thought it was wood fired before I told him. Wood offers a nice smokey flavor, but sometimes it's imperceptible. Gas is easier to control temperature, so I prefer that

I have a (new) gas pizza oven at home, with the option to burn wood or a piece of wood to add taste/flavor. I haven't used the wood option, yet, as the gas fire is so convenient and less messy. I'm still on the quest for the perfect pizza dough, so once I land on one or two, I might throw a log in to bump it up a bit. I've been watching your videos nonstop and my first batch of dough was your Napoli-style pizza dough. It turned out pretty good, but I'm going to give it another try to make it even better. Thanks, Vito - love your videos (and can't wait to visit your place in LA someday.)

That's why I got the Ooni Pro oven for my backyard. Thought I'd spend most of my time cooking with wood ... but the gas is just so great there, it's almost all I use in the summer.

@@leoelias77 I'm terrible with reading KZbin notifications - just saw this. Yes - there is a difference and it is noticeable. I just tend to make 10 or 12 pizzas at a time (we entertain a lot) and it's tough to keep a wood fire going like that. I do have a smoking gun ... maybe one day I'll just try using that to give it a little extra punch.

I've just used gas with my Pizza Party oven so far. Definitely a hotter oven and very easy to maintain. Interested in trying it with wood soon.

I prefer the gas for ease and it gets hotter quicker. There are hybrids out (Just ordered one) Alpha Brio that you can burn both at the same time. I will know more next week. Love the channel, I have learned much.. much respect!!!!! keep the videos coming. Thank You

I love the flavour of the wood fired oven personally. But I’m sure for ease of operation the gas would be easiest. Not sure on running costs. Here in Australia, hardwood is stupid expensive.

There's no difference in flavor. Pizza cooked in gas, electric or wood/coal tastes exactly the same. Most of the "flavor" of pizza is from the high temperature charring and pizzas do not absorb any smoke flavors.

I use a gas oven from Fontana Forni on Saputo stones and the results are amazing, can’t tell a difference with wood. Thank you for the channel, great tips and techniques👍👍🇮🇹🇮🇹

Both look great! I prefer wood over gas. I have two wood fired ovens. And a wood fired oven food truck. You can really taste the flavor difference..Keep up the great vids. Love seeing what you do next.

I have a wood Forno Bravo - just an amateur backyard pizza chef. But the results are amazing even for me. However, it takes nearly 3hrs to develop the heat and coals needed to make 4-5 pizzas is an awful lot of work. That may out weight the results for the at home chef.

I think it depends. Economically, in some countries gas would cost much less than wood, beside they have lack of wood. Gas also takes much longer time and consumption to heat floor. But when it comes to the taste, nothing beats wood in all kind of cooking. I have owned both of them.

I think the gas oven can give bring out the flavor of the ingredients more because they are not masked by the wood flavor. Wood is great, but I respect gas as well.

In oven with wood you can see stone i black(means its not too high temperature ) in another one you see white stone ,high temperature that is big difference every second...

1) Wood - the taste and "gli amore" the aroma of the fumes!* 2) Electric - since its wide available 3) Gas - Well it cooks and if you know how to work with electric owen like Vito I think it is quite nice Kudos! *In my hometown Denizli, we have our special (Denizli Tandır / Denizli Kebap) kebap which must be fumed with special type of wood to enhance the taste and the smell.

One of the main differences is when natural gas burns it generates mositure, but the charcoal or wood don't.

Difficult to say which is better for the following reasons: 1. the pizza was nearer the flame in the wood oven, so it got more radiant heat from the flame. 2. No info on the temperature of the floor in each case. 3. The split screen did not say which was cooked in the wood oven and which was cooked in the gas oven.

I use a pellet (oak) smoker tube in my Ooni Koda. I get the convenience of gas and the wood-smoked flavor.

Would it make a difference if the oven never had a wood fire in it? I'm guessing that the smoke still is noticeable even though the flame is gas fire . Just a question,I don't know this of course.

Hi Vito. Met you very briefly at the pizza expo in Vegas last year. Thank you for the video! Both pizzas look great. I also have a passion for making pizza Napoletana. I've practiced with both types of ovens. Going by memory I don't remember a huge difference in taste, but I probably enjoyed the overall taste experience with the wood version. From my research at very high high temperatures my understanding is wood does not impart flavor because of the really high temperature and very fast cook time but that it does give humidity to the cooking pizza because of the water in the wood. So I am thinking it potentially also then gives aroma, the perfume from the burning wood. So it would give the pizza a little more softness with the wood burning oven pizza and then I suppose the perfume with the wood. Do you think the wood version was more flavorful because of the perfume from the burning wood to give that overall taste experience, or do you think the wood actually imparts a direct flavor into the pizza even with the very high heat? Thank you.

Gas is also natural;-) I’ve been struggling to decide myself looking for the perfect outdoor pizza oven; gas or wood fired oven. BTW Vito’s videos are all awesome!!!!

I guess wood oven is comfortable in heating the floor and less time as I used both. In taste factor no doubt wood oven wins. Considering also gas is more cheaper in some countries while wood is cheaper in others. The coast of making the pizza plays a big role here.

Dear Vito, how can I add smokey wood flavor in a gas oven? I heard about a trick that is being used by gas grill owners, they use wood chips in aluminum foil. What would you recommend to someone who is baking pizza in a gas-fired oven?

to me the wood looks better, plus the wood/smoke would add more flavour/taste to the whole pizza so it would be wood fire for me... in the end Pizza is Pizza so just give me all the pizza!!!

Maestro, I think the wood pizza tastes better, but the gas is easier and quicker for a small group of people and STILL produces a TASTY PIZZA...

both look good could tell the gas oven was hotter. Wood going to cook different every time with temps... but that makes a true pizza guy knowing how the oven cooks... I am just trying to keep up with my 650 degree deck oven here at the house !!!! I can crank out some nice pies !!! One day going to build me a wood fired oven

Do we can use the both at the seam time gas and wood cooking or becuse as you know the oven wood at the medal est very expensive

The amount of flavor that wood imparts in 45-90 seconds is minimal. It’s not non-existent, but unless you try them side-by-side no one would miss it.
