I admire Gordon Ramsey, he was a professional footballer, just starting out, but sustained an injury that ended his career. After years of sacrifice and training and dedication, thrown on the scrap heap. Most lads would have found a job, and fretted about what might have been. Ramsey found a whole new career. Worked incredibly hard and is now probably wealthier and certainly better known than he could ever have expected as a footballer

Im going to listen to this everyday until I become the best I can be at my profession which is not cooking but I grew up cooking, worked at a neighborhood restaurant that put out exceptional food for 12 years when I was in highschool through college etc. & i hopefully one day I can translate my hard work to a successful kitchen. I love cooking more than anything.

Little known fact. Every one of Gordon Ramsay's restaurants had failed except one which was close to it. That's when he was offered his first opportunity to do a show and seen it as a opportunity to finance his last restaurant to keep it afloat. He became famous from tv and now all his restaurants draw in patrons by his name, but stay afloat because of the unknown skilled chefs running them.

You know the problem if you let one mofo walk in anytime and leave, others get influenced and think they can do that too. Now you can argue "but the time he puts in is good quality" well, what if he starts on time and finishes on time? You get more out of him. See it's easy to say sh** like this, but when you own a business, you need a team committed and one you can believe in. You keep slackers, you ain't progressing. It ain't about the individual tbh, it's about keeping your whole team motivated, happy and not feel like "I can get away with sh**".

You might be able to replace barbera because she goes to the loo too many times a day. But when you see a creative genius at work. You kinda have to let some slack off...
