I have recently switched to Japanese cooking after my 14 year old got done beating cancer, because I deemed the way of cooking healthier than Western style cooking. Because of it, I made your Yakitori and proudly served it to my family. Everyone loved it, so I am on a mission to find more of your recipes I can make and afford. The Binchotan grill is awesome! I'm sure they can be ordered online, but the special Japanese coals come from a certain kind of wood whose name escapes me at the moment. My oldest son works for a company that makes the wood products for high end guitars bought by rockstars. Perhaps one of the many kinds of wood he has access to could reach the high temperature needed to cook in the Binchotan. I can buy this beef regularly at my local Costco. They are now selling the Wagyu beef daily.

Wonderful post! I read that there are only two or three USA restaurants/companies that are certified to call their beef true Wagyu. I now understand there are different grades, do you ever plan to do a review of USA beef that may come close to comparison? Would like to see three or four different types we can easily order. AND I can't for the life of me find a similar cooker, Amazon has nothing like your Binchotan Grill, and I can't find there site. Anyway, hope you both have a wonderful Christmas:)

@@alkatraz706 Naw, man, that's not binchotan. That's ogatan, compressed sawdust turned into charcoal. Still burns longer and hotter than your typical briquettes, but not nearly as dense as solid binchotan.
