Binchotan Grill is for outdoor use only, or if you have a VERY WELL ventilated area. In this video, we used only 2 pieces and they were not at maximum cooking temperature levels, and after making this video, immediately put out the coals with water; there was never a danger of fire or risk of carbon monoxide poisoning and the smoke was at a negligible amount as you can see from the gilling.

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

I have recently switched to Japanese cooking after my 14 year old got done beating cancer, because I deemed the way of cooking healthier than Western style cooking. Because of it, I made your Yakitori and proudly served it to my family. Everyone loved it, so I am on a mission to find more of your recipes I can make and afford. *Wagyu* refers to *any cattle* that is bred in Japan or the Japanese-style. *Kobe beef* is comprised of a very *particular strain of Wagyu* called Tajima-Gyu that is raised to strict standards in the prefecture of Hyogo. (Hyogo's capital city is Kobe, thus the name).

Those are “Ogatan” briquettes made of compressed saw dust. Real binchotan is shaped like natural wood, with NO HOLE in the center.

The Binchotan grill is awesome! I'm sure they can be ordered online, but the special Japanese coals come from a certain kind of wood whose name escapes me at the moment. My oldest son works for a company that makes the wood products for high end guitars bought by rockstars. Perhaps one of the many kinds of wood he has access to could reach the high temperature needed to cook in the Binchotan. I can buy this beef regularly at my local Costco. They are now selling the Wagyu beef daily.
