Ingredients
▢ 4 lbs chicken parts (bone-in, skin-on thighs and breasts work well) (You'll need about 4 cups)
▢ 2 tbsp olive oil
▢ 1 cup grapes seedless, halved (red and green varieties are great)
▢ 1 cup almonds thinly sliced
▢ 2 stalks celery finely diced
▢ 3 scallions thinly sliced (white and green parts)
▢ 2 tbsp dill fresh, chopped
▢ 1 tbsp parsley fresh, chopped
▢ 1 cup mayonnaise
▢ Juice of 1 lemon
▢ 1 tbsp Dijon mustard
▢ 1 tsp Kosher salt (start with 1/2 teaspoon, then add more, to taste)
▢ Freshly ground pepper
Instructions
Preheat oven to 350°F
Rub the olive oil all over the chicken pieces and sprinkle with salt and pepper.
Bake for 45 to 55 minutes, or until internal temp reaches 165°F using an instant-read thermometer.
Remove the chicken from the oven and let cool. Remove the skin then pull the meat from the bones and roughly chop.
In a large bowl, mix together the chicken, grapes, almonds, celery, scallions, dill, & parsley.
In a small-medium bowl, mix together the mayonnaise, lemon, mustard, salt, and pepper.
Add the mayo/mustard mixture to the chicken mixture and gently stir until well mixed.
Cover with plastic wrap and refrigerate for at least an hour.
Serve on a bed of greens with sliced tomatoes and avocado. Or, serve on bread with green leaf lettuce. Add more toppings to your taste! Here are some of my favorite Products - Affiliate Links below

I newly discover this cooking channel, but I’ve been following your 3other channels for a couple of years now. I really love this cooking show. You show the normal home cooking and accidents do happen, unlike those other perfect cooking tv show. Keep up the good work on this channel. People will start flocking to this channel. I make a similar recipe but instead of grapes I use dried cranberries. I also use chopped roasted walnuts instead of almonds. I put it on croissants and it's always a hit.

Dill is a herb. Pickles are made by using this herb,dill, in a salt brine over cucumbers. It sets for a specified amount of time and you will have dill pickles. You can grow the dill in a garden, also.

I love that chicken salad except I like pecans instead of almonds and I love the crunch. Not sure about the dill and I would have small diced celery(more crunch) I'd eat it in lettuce cups. Oh god now I'm hungry😀Thanks again for more laughs, keep them coming.👍👍

If you toast the almonds, it makes them taste so much better. I make a chicken salad with mayo, grapes, toasted almonds, salt & pepper. It's a simple recipe, but it's delicious.

If you don't like the almonds try chopped walnuts instead. Much better in my opinion

I made a Chinese chicken salad that won prizes for six years running...and not using the same main chicken dish...but all of them were garlic based in one way or another... The dressing remained the same... My only failure was trying to resurrect a Kung Pao chicken to the salad... It worked beautifully with a 100 clove garlic chicken recipe...and it's remained my personal favorite...

🤣🤣Dill is used to flavor the cucumber! Hince, dill pickles! You are so dang funny! I call my device my roommate, when mentioning her name! I changed her name and forgot what it was, so I couldn't use her 🤣Our mall opened about the time Gray Poupon came to the shelves, we got stuck in traffic and traffic was going both ways, we met a neighbor and he asked if we had any POOP on! My daughter, being the wit she is, aaid, No, I have not fed the cows yet! It was a good laugh while waiting for traffic to clear1 No skin, in the chicken salad, but, being Keto, I would put the skin back in oven and crisp it up and eat as chips! This looks really good!

Dill is used with a lot of fish dishes. David get an apron. Dill is whole cucumber pickles dill weed and dill seed. There are several types of parsley curly and flat leaf which is Italian which is abundance in taste. Chicken tends to dry so I would add half of the juice in. 😊. If I do this recipe which looks good, I would add some more red seedless grapes and use walnuts not almonds. I don’t like almonds. Enjoy Buon appetite

I LOVE fresh Dill in my egg salad and in deviled eggs with bacon YUM! Oh and I don't like almonds in my chicken salad. I have always put grapes and a little chopped pecans....been doing it that way for 25 years now. Made it for a baby shower and loved it! I love mustard, but don't put that in my chicken salad. I do Mayo with sour cream and a tiny bit of sugar and celery seed. I cheat and buy a Publix Rotisserie Chicken to just break apart. It ends up about the same price and a lot quicker.

Personally, I like chopped pecans in chicken salad instead of the slivered almonds. It seems if almonds are used, it would be better to use thinly sliced instead of slivered. But try the pecans unless you just don't like any kind of nut in it. Just discovered your channel & really enjoying it. Have you done World's Best Fajitas?

Chicken salad is always one of my favorites. Something most cooks don’t seem to know these days, is that the strings in celery is one thing that tends to make celery bitter. If you de-string your celery it will not be nearly as bitter. Although the recipe didn’t say, I would have toasted the almonds to add an extra layer of flavor. Chicken is cooked with the skin in order to keep the juices in, and keep the chicken moist, so it doesn’t dry out.

I use chopped walnuts in place of almonds. I also add half a cup of golden raisins soaked in hot water and drained.

It may taste a little weird, Morten Salt, but you need the iodide in the salt. It’s an important nutrient. They come without the iodide in it, too.

Best chicken salad is take a rotisserie chicken, cut it up after it cools, mix with some hellmans mayo, come celery if desired, along with some onions. Best ever chicken salad!!! Adding all kinds of other junk makes it gross😊❤ Good luck!! Also up in PA we have acme markets and giant food stores that make the best ever chicken salad!!! Yummy😁😊🙂😋🤗

I agree with your wife about peas. In fact when I was younger one time I decided to throw them on the floor to under my little brother’s chair to make it look like he threw them on the floor, and I was a good kid. That’s how much I hate peas. Zucchini ties with peas 🤢.

Another cooking tip to keep green onions fresh it is best not to store them in the plastic bag, but you can put them in a bit of water hairy ends or riots down in a glass in the fridge. Yes, Dill is what is used in making dill pickle.

Dill is put in dill pickles as a pickling spice , that’s where the dill pickles get their tastes , I grow dill every year and make dill pickles

An easy way to oil both sides of Chicken pieces is by putting them in a ziplok bag and messaging it in. Then put them on your tray, and sprinkle both sides with salt and pepper. Traditional when chicken thighs are baked or roasted it is done face up.😎

You should have peeled off the outer layer from the spring onion (scallion). And left off the really soggy looking ends, you don't have to use the complete piece. They really looked quite nasty

Great recipe I would take all the bones and skin boil and make broth .. you need to get some small silicone spoons to scrape your measuring cup and spoons and bowels .. this looks yummy ❤

If they have a Mezeh food place where you live, make the bowl and add the beets to it, you might enjoy them that way. I did.

My favorite chicken salad has the grapes and walnuts instead of almonds. I’ve never added dill. You can also add chopped apples if you like. Using rotisserie chicken works well also. No matter what ingredients you use, putting the chicken salad in a croissant makes a lot of difference. Another recipe you may like since you like velveeta cheese is a dip but is also a meal. Use a block of the Mexican velveeta, 2 cans of diced tomatoes (if you want it spicier use rotel tomatoes instead of the plain diced. Put those in a crock pot on low to melt together. Brown a lb of ground beef and add it to the cheese mixture in crock pot. Heat until cheese is melted and it’s all heated well. Serve it over tortilla chips for a meal or use as a dip for the chips. It’s really good but not healthy. Enjoy the videos and getting more recipe ideas.

Cooking tip always cook your meat skin or fat side up. Because the fat wall render as it cooks and drip down based in your meat helping it to be juicier and more flavorful.

I wouldn't add the skin to the chicken salad but I would eat it once I removed it. And I prefer thighs over any other part. I would have saved the bones and used them to make stock for a future soup.

Anyone planning on writing a recipe for other people - should watch your show! This isn't a criticism of you - but of recipe writers who leave out so much pertinent info! It's not just you - there is a world of new cooks - or cooks from different styles of life - who have the same difficulties with a recipe. People who have cooked all their life and are now trying a new kind of cuisine - we need better explanations! You really do well with what you are given! A pickle can be made of anything - vegetables fruit or even proteins! The one constant in a pickle is vinegar. After that it's up to the Pickler. Dill pickles may be one of the oldest and best know kind of pickle, with the three main ingredients being vinegar cucumbers and dill. How about the world's best Refrigerator Pickle? (Refrigerator means there is no canning involved - just do the recipe and then let it sit to develop a couple days in the fridge. ) My chicken salad is shredded leftover chicken or canned chicken, some shredded cheese - whatever i have , chopped celery -my husband preferred chopped onion - mayo and salt and pepper. On good Italian bread or Kings Hawaiian rolls! Thanks for all the great to watch content!!!

Cauliflower 🤮🤢🤮🤢🤮 can’t stand it. Now I’ve got the Doug opening theme stuck in my head. Loved that show but loved Rugrats more. Just added a Chuckie ornament to my collection this year. Lol 😂 there are many a time I’m like, “Alexa…(not sure what to ask or forget what I was going to ask) never mind.” Duke’s Mayo is gross. Everyone else in NC would stone me but yuck.
