We just made this! There are three different rice amounts. The recipe calls for 3/4 cup; one comment from Joe calls for 1.25 cups and another call for 1.50 cups. We went the 1.25 cups and it is perfect!! Looks just like the video and tastes so wonderful. My wife mixed a dollop of the rice mixture into the eggs and quickly wisked it up and the we mixed that into the rice mixture. Perfect. I tasted it warm and it is the most delicious pudding you can imagine . Thanks Joe

What I love about this whole video is that you give respect to a simple recipe that a lot of people turn their nose up at, thinking it's poverty food or something from the olden days .. like bread pudding. Joe used one cup of heavy cream. He took the quarter cup of sugar he held back and blended it in the heavy cream. He said the whipped cream was unsweetened because actually the sugar is meant for the rice pudding. I would just keep it simple and put all sugar in pot with rice. The whipped cream topping can be sweetened or not, your choice.

My mum made us the perfect rice pudding as children in an oven proof Pyrex dish large one cos we're big family and it was so creamy and delicious and out of this world with a perfect layer of brown crispy skin id that not how it's meant to be done like caramelized on the top with delish tasty nutmeg oh my days way better than pan method !

!Need Help! Okay a couple questions. I'm making this recipe right now and I've watched the video more then a couple of times to get it right lol. Unfortunately you never say exactly how much rice you use only a reason for what kind of rice you use. So first how much rice exactly?Also if you only have vanilla beans how much do you think I should use? One whole one? Or maybe a half of one? I followed directions to a tee and mine didn’t thicken like yours. I cooked mine a lot longer…..the rice cooked but was disappointed that mine didn’t turn out like yours 😔. I also didn’t smell it cooking like you did but maybe it was because I used plain vanilla and not the bean. Hope to hear from you. I did forget to mention that I used a diffuser so the milk and rice wouldn’t scorch. Maybe that had something to do with it?

Joe, love your channel, I just am driven off the deep end b/c that sound needs to COME DOWN with the music. If you are going for ambience with the music, it's so distracting, and it interes with my concentration of trying to listen to what you're saying. Kudos to you for adding the eggs/yolks. Finished product looks delish! No nuts though. Texture issues!

Your recipe is on the money, I'm in my 60's and have been making Rice Pudding since I was 12. I've made your recipe many times and every one loves it. I do one thing more, in the beginning when your add the sugar, the rice, vanilla, salt and the butter I add about a shot of Ouzo. It's a Greek liqure similar to Sambuca but a little stronger. Stir that for about 5 minutes, then you add the milk. I follow the recipe to the T except for the Ouzo. To me it give the Rice pudding, how can I put it! Oh yeah it gives it that Bada Bing zing to it... Fuhgeddabodit!!!

I enjoy the music but I believe the problem people are having is that you have to be louder, and that is the problem. Glad you are cooking it all on the instead of in the oven. That is how my mom did it and, like her, you are folding in whipped creme. Thanks for this recipe.
