Actually, people can be severely allergic to meat which is why some people are vegetarian or vegan - if they'd found the wrong person, they could have possibly been in a lot of trouble. Because he doesn't let his personal views get in the way of business. If you want to list vegetarian items on your menu then they have to be vegetarian. Imagine if it was a Jewish or Muslim person who'd ordered vegetarian food because they weren't sure if the kitchen was halal/kosher and they find out it has pork in it. You'd have a lawsuit. Also it brings doubt into the kitchen, if they don't disclose that information then they don't have an understanding of disclosure in food prep. You could kill someone with anaphylaxis if you don't disclose certain allergens. It's just another metric that shows they have no idea how to run a kitchen.
