The Dolphins AI is probably among the most janked of all minecraft mobs, Dolphins require both air and water to breath, and while their normal behaviour allows this by them jumping out of the water periodically, when you get a certain distance away, this behaviour stops and they hang motionless in the water, and thus drown. Or if they are out of water, they asphyxiate. The only way to keep dolphins from dying is to trap them in a cage with a soul sand block beneath them to give them both air and water.
