Hey Gaz, wanted to say thank you. My oldest sister had a brain aneurysm in February. After being in the ICU for months she had lost a lot of memories and struggled with eating. Once she was home my parents struggled to get her to eat for a month. I made her your plantain salad one day and she ate the whole thing and loved it. Now my whole family makes the recipe. And my sister is eating better. She said wow where did you get the recipe. She’s doing better now. But thank you for the inspiration.

They make windbreaks for cooking outside like this, you can even get a whole folding camp kitchen that has shelves and a windbreak for the hobs and shelves for prepped ingredients. That might help if you decide to brave cooking in pretty locations again in the future!

I ust say, I have never been into any of these original, non-vegan dishes BUT I feel like I will be absolutely trying the fish cakes :D They sound absolutely AMAZING! Gaz, when I lived in Italy, I could find flakes of seaweeds of Bretagne from France which I used to sprinkle on pasta and risotto dishes. In the past, I used to live in Japan so I ate tons of nori, konbu (to make soups) and then fresh seaweed salads. Nori and kombu have a very peculiar strong taste, however, I found the fresh seaweeds the most enjoyable because of their slightly sweet and gentle taste not as pungent as nori. Once back in Italy, I totally missed the taste of fresh seaweeds because we, as Europeans had never had the tradition of eating them until France stepped in. I'm pretty sure you have them growing in your area too but just to try, check in natural shops if they have them dry. They taste great, please try them! A big hug. 😁😊💖😜😀🙏😉🤗😄

This will def help on my journey, being an island girl seafood is the hardest to go without. Salmon, oysters, mussels etc. Lots of Vegans use a lot of legumes and I'm allergic to legumes

I made the mashed potato jackfruit fish cakes and they came out amazing. I first put them in the air fryer for 20 min then pan fried them. So I didn’t have to use very much oil. Thank you for these ideas! ❤️ all you do and say hey to Ollie all the way from Texas.

I live in an area of the UK that is frankly a gastronomic desert, so I sadly have to resort to online shopping a lot, but there's so much I CAN get hold of, this all looks lush!
