I know this thread is old, but I'm reviewing because I'm growing two raised bed of beets for picking, and your jars are just gorgeous! Since boiling beets causes some nutrient loss to the water, I've found a more efficient way -- put 'em in your beloved slow cooker! Add enough water to cover, and cook 'em on high for a couple hours (or low overnight). I reserve that cooking liquid and strain it through several coffee filters or layers of cheesecloth, and use it to make my picking brine. Hope this is a good contribution to the process! Hugs!

Linda: Please explain how you KNOW that there is no "beet nutrient loss to the water" when you cook beets on high for a couple hours in slow cooker? Or, do you just go by what the makers of the slow cooker say? (who have definite sales motivations) Nutritionists say, (with no proof) that nutrients in cooked beets are more bio-available to the body than raw. They say it is the same with many of the cruciferous vegetables. (However, since they don't make the vegetables. God does, or the means of cooking them, and the studies are available, I tend to believe them more than those who have something to gain or lose when making claims of benefit of their products) White (bleached) coffee filters add unwanted chemicals to whatever you are straining and that is definitely the case when using new unwashed cheese cloth. Though, I personally would have no way to prove the truth of any of this, the last paragraph I wrote, is just common sense.

I was gifted a huge bag of beets yesterday and wanted to pickle most of them, I’m not a lover of beets, but my hubby is, so I’ve never canned them before. My mother and I make pickled beets every year, she's been doing it most of her life and taught me how to can. She's 80 years old and has used the same recipe forever, her brine is basically like your's, but, she has stick cinnamon and a few cloves added, and we also cook the onion in right with the brine. I'm very glad she taught me how to can years ago, as my brother and I raise a big garden, or gardens, every year. We made quite a few beets last year and 200 quarts of canned beans. Love the life style.

It is good to see a Pickled beet recipe. My parents always made pickled beets, but when looking for recipes I see way more spiced pickled beets. So glad you didn't add any spices. A big thumbs up. I have never tired them with onions. I will have to try it.

I'm just getting into home preserving.. I started out just doing lacto-fermented Brine pickles and other Veggies... Your video recipe was my first attempt at hot water canning.. This was the best tutorial I've run across on the Net for beginners like myself.. I was very apprehensive to even consider expanding into this method, but the way you illustrated it made it look within reach... I made 6 jars a week ago, and all the Lids made that little metalic pop sound... Gave me a lot of confidence, and definitely laid the groundwork for me to build on.. Thanks so much for posting this.

I decided to really try my hand at gardening this last summer. I had beet seeds and said to myself, well why not try something new. My beets did really well and I had a lot of harvest. Well once I harvested them I was searching for a way to prepare them. I found your video and followed your recipe, the only difference as I am diabetic I used swerve sweetener instead of sugar. I have to tell you I love these beets. You mentioned putting onions in the jar and I did. (I too love onions:) I should have used more onions because when you eat the pickled beets with the onions its so divine. So next year I wont be shy I will be adding a lot more onions to my pickled beets. Thank you for a wonderful recipe, btw I canned some Jalapenos this way using the same recipe and they are stellar. Love your channel and what you have given me. Im enjoying some canned beets with onions as we speak. :) Hope you are well and safe in these turbulent times... yours truly... I love to can. We have the same recipe for the brine for these beautiful beets.. The only thing I do differently is where our brine calls for 2cups of water. I don't use tap water. I save the best juice where I cooked my beets. I just strain it and it makes my beets more flavorful and the color is much deeper. I have never put onions in either, grant you I will this year!! :) Thank you for that idea! It is really sad young ppl don't can like they used to. I grew up old school. If u didn't put food up, weather it was canning or freezing you were in trouble for the winter! Now it's almost like a lost art! It makes me happy to see you canning and sharing to teach others! :)

Exactly the information I needed and presented in precise detail. I'm lucky enough to have an AGEE preserver which has served me so well over many years. I have, however, never grown my own beetroot until this year. The only changes I would make would be in using malt vinegar as that is the one my late Mum used for our family preserves. wow - can't believe I am back to follow your instructions once again - I loved the beets I did last year and hey I didn't have to buy any store brands for over a year now. I saved a link to you on Pinterest and so it was effortless finding my way back to your recipe.
