(Please scroll down for English Description) 一向幫襯開買進口肉食嘅舖頭,入咗批格陵蘭深海比目魚,十幾磅一條,好正!訂咗一條,今晚煮四片四個人食,簡簡單單香煎咗佢,再做個檸檬牛油汁淋上面。 呢個煮魚嘅方法,用係其他魚都一樣可以,你買到咩魚咪用咩魚囉。配菜方面我用薯仔同四季豆,你喜歡可以用其他。
四人份材料:
比目魚4片(可用其他魚代替)
檸檬1個
干葱1粒
白酒200ml
無鹽牛油50g
忌廉250ml
蕃茜5棵
百里香8棵
四季豆350g
新薯1kg
適量鹽及黑胡椒
The shop where I always buy imported meat recently imported a batch of Greenland Halibut, each one is over 10 pounds, very nice! I ordered one and going to cook four slices for four persons, I will simply pan-fry them and make a lemon butter sauce for the fish. You may use other fish using the same way I cook this halibut, just use whatever you can get. For side dish, I use potato and green bean, you may use your own choice.
Ingredients for 4 persons:
Halibut 4 slices (you may use other fish)
Lemon 1 pc
Shallot 1 clove
White Wine 200ml
Unsalted Butter 50g
Whipping Cream 250ml
Parsley 5 pcs
Thyme 8 pcs
Green Beans 350g
Baby Potatoes 1kg
Salt & Black Pepper to taste

銀雪魚 Cod fish 係西餐常用,香港人比較喜歡横切一片片,西式較喜歡起肉整件魚柳。用呢個汁去配煎香咗銀雪魚都應該會幾好味,不妨試試。
