thanks for the easy recipe. I tried but I could not succeed. my basic difference is I used our local rice floor, because of different rice I had to use 250 gr water instead of 200. Until the ovening all was looking perfect for me. However after ovening I had a bread shrinked at the center. Can you advise me ? Thank you.

I have made this bread twice today and it colappsed both times. Question: did you use conventional oven or not? Why other rice flour cannot be used?

In Japan there are many types of rice flour easily found and they have a nice classification system that divides it into the categories of confectionary, bread, and noodles. The difference between these categories is the amylose content. For breads you want an amylose content between 15-25%. Too low and your bread will likely be too soft and/or collapse, but too high and your bread will be very stiff. So the brand used in this video, Mizuhochikara, is specifically marketed as the bread type. You of course can use other brands of rice flour, but you have to make sure the amylose content is suitable for bread. If buying a Japanese rice flour many brands put the standard numbering classification in the corner, so look for the number 2 bread type. As an alternative, in the United States people use a mix of brown rice flour and white rice flour, which I think is done to balance the amylose. Perhaps try this if you have trouble finding a specifically bread type rice flour. Also, Japanese ovens are usually very small but work the same. Hers is definitely a normal oven.

Sorry for replying late! I know that Mizuhochikara is really hard to get in other countries :( I don't know any other type of rice and reice flour is possible to be use for this recipe,sorry. but It is said that rice which has drier texture is more suitable for making bread than rice which moist texture. I want to know other rice flour which can be used for this recipe very much...... Please tell me If anyone find it in your country!

As I know, it’s kind of long grain rice which contains more starch than normal short rice. You should try google to find a substitute. Best of luck!
