Looks great Chef, as usual. I make the "same" with Blue Crabs. Since I cook Chinese on a gas burner outdoors I've switched to your premixed sauce concept. less items to carry out!! Your flavoring (recipe) is on the money.

Hi , sorry this I know sounds a kind of dumb question , but as you coat the shells in cornstarch / flour then deep fry them does that mean they are okay / safe to eat ? , like salmon / fish bones etc if there cooked long enough they lose the sharp edges ( safe to eat ) as they becomes soft and crumble , I have watched a few chefs ( not as good as you , your the boss :-) ) , but they generally boil the shells and scrape out the meat , and keep the water / stock and I assumed they dispose of the shells . but thanks for posting it looks really nice :-)

+David Craig ----- Confucius said " There is no stupid ( dumb ) questions, only stupid ( dumb ) don't ask question " . to answer your question. when deep fry for at least 3 minutes. They are fully cooked. Seafood like this are very quick to be cooked in no time. BTW, thanks for your well composed nice comment.

The tongs get sterilized by the hot oil, not to worry but the oil looks like it could use a clean one. :(
@HAPPYWOK

That is correct. I just like to show some subscribers, what i do with fresh cooking oil afterward. I reply to them, don't throw it, if they are clean and not heavily discolored. Maybe use to recycle for one or two more used. and this video is one example. thanks for watching.
