The entire scenario is reducing "carbs consumption", which subsequently lowers glucotoxicity. Then, the ER stress in beta cells decreases, so our own glucose-stimulated insulin secretion and insulin receptor production functions are restored. Although some researchers believe hyperinsulinemia causes insulin resistance, I think the other way around makes more sense.
