芋角是用芋泥作皮,将鸡肉或猪肉、虾肉、冬菇等炒熟后作馅,包制成角形,下锅油炸而成。炸成后呈金黄色,表层小眼密布,形状仿如蜂巢。芋角外皮酥脆,内层软滑,馅有少许肉汁,吃起来外酥脆松软,有种咸咸甜甜的滋味。
今天阿嬷将要制作一款简单易做的港式点心,也是阿嬷最喜欢吃的点心之一-《芋角食谱》(Taro Puffs | Wu Gok)Recipe
Pastry (皮料):
600g taro, mashed (芋泥)
65g wheat starch (澄面粉)
85ml boiling water (热水)
1 tsp salt (盐)
1 tbsp sugar (糖)
1/4 tsp pepper (胡椒粉)
1/4 tsp five spice powder (五香粉)
60g shortening(白油)
Filling (馅饼)饼:
450g chicken meat, diced (鸡肉,切丁)
100g shrimp (虾,切丁)
3 mushrooms, soaked and diced (3朵香菇,浸软切丁)
1 Carrot (胡萝卜,切丁)
1 Green Onion (青葱切成葱花)
Seasoning (调味料):
1 tbsp oyster sauce 北海道鲍鱼汁(蚝油)
1/2 tbsp light soy sauce (生抽)
1/2 tsp dark soy sauce (黑酱油)
1 tsp salt (盐)
1 tbsp sugar (糖)
1/4 tsp pepper (胡椒粉)
1/2 tbsp corn starch (玉米淀粉)淀粉
1 tbsp water (水)
