The mixture of pork and fish may sound foreign, but it makes for a wonderfully savory and healthy combination. I used flounder here but any types of fish can do. Most fish has a mild flavor and texture that really makes these dumplings delicious and pillowy soft on the inside.

Pork and Fish Dumplings 鱼肉水饺
For the dough: 面团:
-- 500g all-purpose flour 中筋面粉 500克
-- 263g cold water 凉水 263克
-- 1 egg white 37g 蛋白 37克
-- 3g salt 盐 3克
For the filling: 馅料:
-- 1lb fresh fish paste 鲜鱼滑 1磅
-- ginger 姜 适量
-- 1.5 teasp salt 盐 1.5茶匙
-- 1 teasp dashi powder 海带粉 1茶匙
-- 200g ground pork 猪肉馅 200克
-- black pepper 黑胡椒粉 适量
-- Sichuan peppercorn 花椒 适量
-- sesame oil 麻油 适量
-- 150g leek 韭菜 150克
