Sydney doesn’t have a fennel allergy. She made a fennel salad for the family meal back in S1E1. Carmy lied to make the dish the way he wanted & it’s what brought Sydney in his life. LOVE this episode for that full circle moment! I honestly can’t wait to see when he finds out that she got the dish & she finds out that while he didn’t know who the dish was going to, he specially made it the way he wanted to.

I love this episode, because you're watching a background montage intro.. and you're watching it... and you're watching it... and then it ends and you realize the ENTIRE EPISODE was all one big background montage intro.

I like the difference of work environments this episode displayed, with the one lady saying quiet and glasses guy with constant insults

I think it's one of the best season openers for an already established series. With the help of the music, we're on a dreamlike journey through a lot of previous events that explain so much about why Carmy is the way he is. Beautiful stuff.

I think Carmy has misunderstood the meaning of Every Second Counts this whole time. He thinks it's about rushing through moments to save time, but he really doesn't take time to live in the smaller moments or appreciate them as he goes.

The list Carmy was writing was the "non-negotiables", except a lot of it is completely unhinged, obsessive, and not practical as we see in future episodes. Rock Lee's list in the post-episode discussion was a reasonable list that makes sense. The difference between dedication and obsession is that one is healthy and productive, while the other is self-destructive. Also we had some real, famous chefs and restaurants featured in this episode: Daniel Boulud of NYC's "Daniel". René Redzepi of Copenhagen's "Noma". We don't see Chef Thomas Keller but his restaurant, California's "The French Laundry" is featured. We have Chicago-based "Ever", which was featured last season (the Richie episode), where he works under Chef Terry (Olivia Colman). The character is fictional, and the real head chef at "Ever" is Chef Curtis Duffy, who doesn't appear. And speaking of Chef Curtis Duffy, before opening "Ever", he was the head chef at Chicago-based and now-closed "Grace", the kitchen where Carmy works at under Joel McHale's character, the asshole chef who is constantly berating him.
