The setting up was already with so much effort, couldn't imagine after their hard day of work and they still need to dismantle everything and repeat the whole process again tomorrow for 6-7 days, very tiring. Upmost respect for those people running these kind of food and beverage businesses.

You're exactly right!! I've known some people, a family, like in this video, who owned a "Yatai" business in Fukuoka.They are the most dedicated hardworking people I've ever met in my entire years of travel in Asia, mainly in Japan. Although I'm an American, I fell in love with their culture, their people, their passion to do things with conviction, detailed hard work to get everything done with precision. Having a "Yatai" business is hard work. Because of very strick city guidelines, they were only given a small window of opportunity to start setting up their stall at exactly 5pm, and not earlier than 5pm, or they could get a warning or even penalized by the city.That's what we are seeing on this video.They were doing it as fast as they can to make sure they are up and running by the time office workers gets off from their job. If they failed, then they lose a big chunk of their business for the day. Their hard work just started, and it will be a long night for most of them, sometimes they would stay open until 2-3am in the morning, especially when they get real busy. The hardest part of having a "Yatai" business is when you call it day and start packing up. In a normal day, it would take them 2 hours, at least, to pack up everything, clean up and head home. To some of them, who has a limited budget to go around, the day is not over yet until they go to the market, buy what they need, re-stock and replenish their supplies for the day. They would be lucky to have a 3 to 4 hours of sleep on any given day. I admire these hardworking "Yatai" people a lot, and I'm already looking forward to visit Osaka and Fukuoka again when this Covid-19 thing is finally over, or the country of Japan relaxes it's requirements.

There are lots of things to do just to set-up. It is indeed a tough life for them as it is a daily routine affairs . It is impossible to handle alone without a family team work. Every one was so indulged in their respective work that they could hardly talk to each other.....This is a fine example of family team work ..... May God Blessed them with good Health and strength .....

when i was in Fukouka i was warned by my japanese friends not to eat on yatais because it is much more expensive, now i see how hard work they do i will eat at these yatai when i go back to fukouka

And just to let you know if you don’t know what the definition of a man hour is or women hour in this case. It means fit as many people as you have working that’s as many hours in reality. So for people set up for one hour that’s for man hours. It’s a lot of work. I’m so proud of them. What a great example.

I can't imagine myself rebuilt whole stuff every day. Like I feel lazy even cleaning my room let alone build a restaurant then put it back every single day.
Y’all this is way more than one hour set up. All the prep work and cooking that goes into this add another at least two hours if not longer.

what gets me is if the space is big enough for them to be there to open why not just put in a building like a cabin or hut freestanding on the location, so all the items can stay and is locked up each night. instead of having to put up and down every day look at the number of people needed and the time, so this set up in wages is not small. and bring all the items from a lock up location costs fuel. we are seeing this in good weather, show what it is like in bad and how wet they get before even starting to serve people.

It's because the cost of occupying the road is ridiculously low, compared to the surrounding rents. In addition, "The Nakasu stall" is a big brand and can expect larger sales than a typical store business.

The monthly fee for occupying a street in Hakata Nakasu is 5,600 yen per stall. Considering the brand value of Nakasu, this is an unbelievably low. However, the permission to operate the stalls there is sold at a high price, some say around 25 million yen.
