As I said into a previous post, Epirus is known for its pies, sweet or savory, we can literally wrap anything into a pie! Enjoy yummines memories from childhood! Kotopita is made in all over the regions of Greece and each family has its own unique recipe, you can make it without eggs or with feta cheese instead of kefalotyri or you can make it plain without any cheese or peppers! You choose and adjust to your own preferences, no matter what you add, the result will be phenomenal, a burst of flavors in your mouth and the unique feeling of a Greek village! Recipe below 👇⬇️👇
• ingredients:
-3-4lb chicken thighs or breast or combo (or a whole chicken)
- 2-3 big diced onions
- 3-4 1/2 red pepper diced
- 1/2 a cup rice
- 2 cups water
- Sal & pepper as needed
- chicken bouillon optional
-2 eggs
- 2 handfuls grated kefalotyri or Graviera or feta ( your choice)
* for the dough:
- 4 cups all purpose flour
- salt
- 2-3tbsp vinegar
- water as needed ( about 1.5 - 2 cups water max)
• instructions:
- into a pressure cooker sauté the chicken, the onions and the peppers
- add the seasoning, the rice and the water and cook for about 15 mins
- when is ready transfer the chicken and the rice into a bowl ( make sure the chicken is totally shredded and no bones)
- add the eggs and the cheese, mix and set aside
- into a large bowl add the flour, salt, vinegar and water slowly as needed to form a dough non sticky, transfer into the countertop and need until you have a smooth dough
- divide into about 9-10 balls of dough and with a thin pin roll creat a sheet of phyllo dough ( check my video on how to make homemade phyllo dough)
- add 3 layers on the bottom and oil each layer, add a little bit less than half of mixture, add a phyllo sheet,oil, stuffing again, phyllo sheet,oil, and the last stuffing again ( so about 3 layers of stuffing and phyllo) , then cover with remaining phyllo sheets and oil each layer, precut and bake at 380F (180C) for about 1 hour.
