As with most of these experts it´s not like they are yoghurt sommeliers or something like that but rather producers with years of knowledge. In this case it's as she says, she has a frozen yoghurt company and it's from that she has gained her expertise.

These price points seemed a lot closer than a lot of the other episodes. Sure, the more expensive ones are around twice as expensive, but if you look back at a lot of the other episodes there are many with 4 -10+ times the price. Impressive that she guessed correctly each time.

This is one of the reasons why I found this episode to be more boring than the others. But I mean, it's just yogurt which anyone can just make at home if you wanted to. There's no difficult processes or technology going into it so the main difference between the expensive and cheap ones is simply the milk and flavourings used.

@@user-pm7me3xc2c that's... a bit of a naive statement if I may say so. There's a lot more that goes into making a good yoghurt than just the ingredients. The choices of yoghurt here might not have been very exciting (probably a US thing?) but 'simple' food can be very deceptive.
@Li1t

@Gongasoso

@Anurania

The first step is to heat the milk, which alters its structure and makes it suitable for yogurt. Heat 1/2 gallon of whole milk gently until it's just below boiling. When steam is rising from the surface and the edges are beginning to simmer, remove it from the heat and allow it to cool to just above room temperature. When the milk has cooled, add a culture. This can be a previous batch of yogurt, or a commercial yogurt such as the probiotic drink. A couple of tablespoons is fine and then stir the milk thoroughly to distribute it. Put the milk in a container and place the container in an oven with the light on. The light produces just enough heat for the bacteria to be active. Leave it in the oven for 8 hours. After that it will have firmed up and become yogurt and can be stored in the fridge. It should stay good for a couple of weeks, and at any time you can use it to make a new batch.

I just started eating the French style Yoplait "Oui" line. I think that it's so cool how they culture their yogurts in the glass container. And that you get a souvenir jar to use around the kitchen. It's sort of like when Whole Foods used to sell their creme brûlées in ceramic ramekins.

I know this is a joke, but FYI mayonnaise is made from eggs and oil, there is no milk present. Yogurt is made from cultured milk.

As I'm intolerant to dairy I've tried switching to vegan options and making them myself (as vegan yogurt is so much more expensive than regular one). So I really thought this would be great to understand the making process. Didn't particularly get that, because everything she mentioned I've already tested myself. I love making my yogurt to the level of tartness that makes others gag or add a ton of sugar (never add any sweeteners). My favourite is coconut/oat milk yogurt, especially because both of them are naturally thick yogurts.

What astounds me, as someone who worked in restaurants for years and has been a foodie ever since, is that none of these experts are ever wrong. I've been at tastings with world renowned experts who were consistently wrong. I'm starting to think the fix is in in these videos. They may not tell the expert which is which but they could easily choose extreme examples and make it blindingly easy for them.

They definitely make it easy by only choosing the more expensive of the two. If they were faced with 20 options and have to choose the 'best' it would be a lot harder

You can make (essentially) lactose-free yogurt by letting it ferment for 16-24 hours. It comes out more tart but it's still delicious. There are tons of lactose free options as well and some actually pretty decent non-dairy yogurts out there.
