This is a south Louisiana dish. It’s called gumbo z’herbes (we pronounce it gumbo zab, zab rhymes with jab or cab) and it’s one of our old fashioned traditional gumbos we eat throughout the year, but especially on Holy Thursday during Holy Week (most of us are Catholics). I’m from south Louisiana and I grew up my whole life eating this. You can google it, “gumbo z’herbes”. Some folks call it green gumbo too. We usually serve it over white rice just like all our other gumbos and with potato salad on the side and with some buttered French bread or cornbread on the side and hot sauce on top the gumbo and a lil on the potato salad.

I actually remove the stem the same way, but...I boil them in the first water because most of the nutrition is in those stems. That nutrious stem water is what I cook the cut greens in...nutrious and flavorful!
