I've eaten this dish at yoshinoya many times, it's savoury, aromatic with a slight sweetness. Unfortunately this recipe has far far far too much sugar in it. My gf who loves sweet food couldn't stomach it even, so I had to pour out the sauce and remake it myself.

please excuse the silly question, but if you cook all the alcohol out would it then be okay to use it? usually most of it is cooked out, but if you wanted to be extra sure you can always use the alcohol at a step where you're finishing frying/sauteeing the aromatics ( onions garlic and or ginger in this cass) and then you can continue to heat till its evaporated away completely, and move on with the following steps. I don't know how strict the rules are so i was very curious to ask. You generally don't want much alcohol left in the final product anyway because ethanol is bitter and leaves an offputting flavor, but as an alcohol it is a different kind of solvent compared to water and oil, which will extract flavors from the food and then be cooked away. Leaving the extracted flavors on the surface. I'm not Muslim and honestly have no one to ask so apologies again for the question

You can't go wrong with any of them. using chicken stock wouldn't really make the dish tastes like chicken. But I would just use beef stock for beef dishes.

I use beef stock powder. Stock powder is stock in form of powder. They also come in cube shape, in that case it is called stock cube. You can use bouillon too.
