I’m no expert, but here goes… The difference between dressing and stuffing (I believe) is that “stuffing” is actually stuffed and cooked inside the bird and dressing (which is safer, from a food safe standpoint) is cooked in a casserole dish etc and not inside the bird.

For me, this is a (minimal) 3 visit buffet and he did it correctly, which I've had to learn the hard way. He made sure to get small enough portions to be able to try pretty much everything in the buffet. This allows you to go back and finish up with your faves! I've made the mistake (several times) of loading up on the first run and not being able to enjoy EVERYTHING available. I dug how he interspersed veggies throughout to get some balance. The reason I call this a 3 visit buffet is because the first time is the sample everything and finish off with your favorites visit (the explore visit). The second visit would be to come back to gorge on the faves you discovered in first visit (the focused visit). The third visit is to go hog wild with the salad bar (and I love salad) and maybe desserts. Reason for the third is because I've learned if I mess with all-you-can-eat salad first, I end up getting filled up with salad and don't get to try too much of anything else.

Now THIS is a proper southern/soul food buffet! Unfortunately seems to be missing fried okra, deviled egg potato salad, pecan pie, 7up cake, and red velvet cake. I know there are some other staples missing too, but i know you cant have everything. I'd personally be so incredibly happy if I was there 😊. I'm a wee bit jealous at this moment, and my tummy is growling hard!

My absolute favorite vegetable is Asparagus chargrilled and then dressed with my own soy, garlic and balsamic vinegar cooked down for a good 5 minutes to reduce the liquid and thicken the sauce and at the last minute I whisk in 2 teaspoons of butter and it turns the dressing glossy and then I drizzle it all over the asparagus. These are best served with a lovely fresh sautéed salmon 🍣 or tuna 🍣 😊

I'm from the UK...We don't get much of this. Those dishes look fantastic. Sure we get KFC, Mexican restaurants and I've made BBQ and chicken fried steak. But the rest of those dishes look soooo different. Would love to try.

There is no eating like Southern eating. I grew up in MS and GA. Boy, do I miss all that food. I am stuck in South Florida, 95% of the restaurants here are Cuban. You can only eat so much black beans and rice. I enjoyed this video so much, thank you. I do need to correct one thing, you were eating yellow squash, not zucchini.

Paula Dean has a recipe called Sweet Potato Bake. It is just as Joel describes this dish. I cook it at Thanksgiving and Christmas. Family loves it! It does taste more like a dessert and not a side vegetable!

Favorite veggies: Any kind of greens (mustard, collard, turnip, beets, etc.) with apple cider vinegar. Pickled okra or green beans. Beets... they're good pickled too. I'm a fan of vinegar.

I only use mustard on meatloaf I probably would try gravy but I just love my mustard. Never never ketchup on anything. I love ceggies but I love animals more. Grew up on a farm where everything was fresh. I love "Careless Whisper," It reall cracks me up when you play it for when you really like something.

Good meat loaf is incredible. My mom made crazy good meatloaf with very lean beef and of course ketchup. Add some home grown tomato on a sandwich and some sharp cheddar and it was DELICIOUS

That's not cracklin cornbread because it's crackling...."cracklin" cornbread has cracklings in it. Bits of pork fat and skin fried and rendered down during the process of making lard. These bits are called cracklings but here in Alabama we say "cracklins". You can chew on them as a snack or put them in cornbread, etc. Eats well with greens & beans. You ate a cornbread fritter if there were no cracklings in it. We also make "tater patties" or some call them potato fritters here. Same concept but with mashed potatoes, flour, milk, & egg. And ketchup on meatloaf.❤ You need to come down south more because we eat like this everyday! 😂

Favorite veggies: beets and fiddlehead ferns Try liver & onions breaded and lightly fried in bacon grease and topped with bacon😊 Cabbage boiled in chicken stock with crushed red pepper flakes and tarragon!

Dressing and Stuffing are not the same thing. Stuffing is made with bread, dressing is made with cornmeal. Completely different taste.
