I can imagine Guts being all curled up in corner, and when you approach it, it suddenly unfurls its limbs and stands up straight, showing its full size.

The primary reason for adding an initial bending of joints in the rest position is to force the IK solver to want to continue bending in that direction. If a joint, at rest, is angled +12 degrees on the local X-axis, then it will try to not go below that, and vice versa. This makes it far less likely to rotate joints into unnatural directions when animating. It really depends on how your animation pipeline is going to look as to whether a strict T-pose is needed, I guess. Unless you are using only FK for a limb, it's usually best practice to pre-bend your joints slightly.

Just a thought I had, since you're going to be using unreal I think you should use motion matching for the animations. It's a difficult world to get into but essentially it eases between animations naturally and physically through neural networks. It creates extremely realistic and smooth animation that adapts in realtime, and it comes stock in UE5 I believe. But yeah - it'd take the creepiness to a whole new level because you wouldn't be distracted by choppy animation transitions and such!

10:35 Hi, Boro! You already did nice rig for Guts, but I have idea, that might be interesting as well. Do "tail rig" for his arms! Or "Bendy bones", it will work greatly as well, but conversion to normal bones before export is a bit tricky. It will make character more unique comparing to that SH3 guy, and bendy-stretchy tentacle arms allows to make more interesting animations that really match name "Guts" =)

I'm guessing the arms were bent forward in the T-pose because the dude is leaning backwards slightly, so the shoulders are slightly behind the elbows along the Y axis and the elbows are slightly behind the wrists. When they go to T-pose they rotate up and out but remain offset along the Y axis. Edit: although the arms hang behind in the sculpt so maybe scratch that 😅

Autorig pro makes things super easy all that you actually have to do is check the weight paints to make sure nothing is deforming other parts of the mesh

The spine moves everything because of the automatic weight paint in autorig.. This is why people build their own rigs and why they only model in A pose, because weight painting is hell and annoying.
