I can’t tell you how many times I’ve made your tofu scramble in the past couple of months. It’s my empty the fridge scramble. Different every time. I use it as a base for so many different meals.

Just made this, it was so good and very filling for a small amount of food. Added mushrooms, black beans and red onion with the other ingredients. Thanks for a great recipe.

Oh, avocado or guacamole would be great on top of the tacos. and/or a little cashew crema. My mouth is watering! I also recommend purchasing silicon mats to fit your baking sheets. Saves some paper. Thanks folks.

Awesome recipe idea. Never thought about making tofu scramble on a sheet pan before. 👍 I think back to the old days when i was not vegan and used to eat eggs. I don't understand how I did it, I mean eggs smell like farts. I just ate them and didn't give it a thought. I get disgusted when I smell eggs now, don't enjoy the fart smell. Black salt (Kala Namak) also smells like farts so I won't be including it when I try out this recipe.

Hi Ruby! Here in Arizona we are able to find many options for sos free compliant tortillas! La Banderita and De Maiz are great brands!

Delicious!!! I used frozen hashbrowns, frozen chopped kale, chopped onions and bell peppers, and added chili pepper seasoning and black beans. I baked at 375 for 30 minutes to make sure the frozen items were cooked well. I will definitely make this again. Nice versatile recipe.

Thx for this idea! Will try when weather cools off some...mid-90s everyday here. I use the oven sparingly in summer...we ate the stove variety of tofu scramble this morn'g, but I am going to try this, FER SURE. Maybe for our 2nd meal of the day. If I do it for brkfst, instead of beans I use a homemade vegan "soy"sage in it. Y'all are so cute together. Luv the practical side, esp! (Never throw away a sheet pan, yes! What's parchment for, lol).

Hi there! Fortunately, in Arizona it is easy to find compliant tortillas at almost any grocery store. Some great brands are La Banderita and Guerrero! You can always make your own too!!

I was looking for some guidance on adding potato to scrambled tofu, and this sounds fantastic, especially since it's even in the oven and not the stove. Also, on sheet pans - I once lived with a family member whose partner thought they should be washed every time and there was no need to line them. I think that was only because I was doing the dishes though 😂

Would tossing the crumbled tofu in cornstarch or arrowroot powder here make it more crispy? Some people do that in other tofu air fryer recipes.

Well I'm just trying this now and so far not going so great. Made the mistake of not cutting the potatoes small enough and so I wanted to stir the ingredients after it was in the oven for a while and well parchment paper ripped underneath so we'll have to see if it comes out okay in the next little bit I'll leave it alone. Plus I put too much turmeric in it. I don't even know why I put turmeric at all I don't really like it and I always end up putting too much. A little goes a long way. I'm trying but I'm not the best cook haha

(Switched to WFBP SOS Free 2 years ago and am still waiting for my taste buds to acclimate to this way of eating, but so far, the food is not very exciting to me, but I keep eating this way for my health. We both have lost the equivalent of my current weight which is an ideal BMI, first time ever in my life, and we feel so much better!) I did add a little diced red onion, 3/4 of a jalapeno, diced, and about 4 button mushrooms chopped. I will be adding this to my rotation.

That is so wonderful to hear! We are able to find plenty of sos free tortillas here in AZ. Guerrero is a great brand. We used the WYW Sriracha as salsa!
