This classic homemade carrot cake recipe is topped off with a tasty cream cheese frosting and is very moist and delicious. You will love how tasty this traditional cake is and all the extra ingredients you can put in it to customize it.
Carrot cake is a spice cake consisting of carrots, cake batter, and spices that are topped with a traditional cream cheese frosting. It’s a wildly popular cake and is especially beloved during the Easter holiday season.
Carrot Cake has been around for centuries, believe it or not, but was originally introduced as a carrot pudding. According to CarrotMuseium.co.uk, the carrot cake as we know it today was created out of carrot pudding. It was said to be a healthy alternative to sweet desserts, but as you can see this cake is not on the healthy side.

Ingredients for this recipe:
• 1 ½ cups walnuts
• 3 cups all-purpose flour
• 1 tablespoon baking soda
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 teaspoons ground cinnamon
• ¼ teaspoon ground nutmeg
• 2 cups oil
• 1 cup sugar
• 1 1/2 cups brown sugar
• 6 eggs
• 2 teaspoons vanilla extract
• 4 cups peeled and shredded carrots
• cream cheese frosting recipe x 2

This was my first time making a carrot cake and this recipe was awesome! I did replace one cup of oil with full fat yogurt and the cake was super moist. Thank you Chef

Nice! We had made a carrot cake last week with a recipe pretty close to this. One difference is we had decided to brown the butter for our cream cheese frosting. Turned out awesome and gave a nuttier, almost maple-like hint to the frosting!

I like my carrot cake moist and filled with walnuts, raisins, pineapple, coconut, carrots. It's great when you can find one that has a nice balance.

@@alij9888 No....a Hummingbird Cake is banana based. They do have some similar ingredients though and sometimes people do put coconut in their hummingbird cakes as well.

if you used 'even bake cake strips' around your cake pans, your cake will remain flat. there would be no need to remove the top. soak them in water, wrap around cake pan and bake. love the recipe. I will add this to my list because I hate pineapple in my carrot cake. this looks better than my current recipe.

I skip the vanilla in the frosting and add a couple tbsp of fresh lemon juice. The added tang contrasts perfectly with the sweet in the frosting and the cake.

It looks lovely. But I wish some of these chef's would add a little bit about adjusting for altitude. I moved from 1000 ft to 5000 ft 18 months ago and it has been a baking adjustment.

Recipe looks great but how is adding raisins (or anything else) different from adding toasted nuts to a carrot cake? Do raisins not have a "natural flavor?"

Raisins have no taste to you? Nuts are pretty traditional in a carrot cake.

Hate pineapple, coconut, or raisins in carrot cake. My personal opinion is that it has no place in it. People added those things over time to try and manipulate the flavor and make it more moist instead of just learning how to make it correctly.

@Chef Billy Parisi the first carrot cake I had was made by my brother-in-law’s Croatian Grandma. I didn’t know there was pineapple until later, also she never iced hers which it seems everyone does now days. Love your videos BTW your presentation is clear and concise.
