When I went low carb about 15 years ago now I craved butter. And as I was losing weight I went for it. I had been diagnosed with degenerative bone disease in my early forties. In my right foot. Every step was painful from morning to night. I was supposed to be in a wheelchair by age 57. About three months after eating about a pound of butter a week, I realized my foot no longer hurt. I am now 67 and can hop on that foot. Butter is full of nutrients that are necessary for bone health. I was not getting them listening to the so called experts.

I learned how to cook at 12. I rarely used any seed or veg. oil whenever I cooked for myself. I cooked with butter and animal fat as often as I could. Which was 95% of the time. When I was old enough to work(18), I started cooking in restaurants. Which caused me to improve my skills by taking cooking classes in community college(incl. nutrition classes). The way the instructors villified fats was insane! It just seemed suspicious to me how hard the nutrition classes pushed the 'low-fat lifestyle', yet they said virtually nothing about sugar. So, I refused to change my eating habits. I kept eating butter, & fatty proteins everyday: salami, sausages, bbq, bacon, cream sauces, double & triple cream soft ripened cheeses like brie, camembert, livarot, or St. Stephen, etc. My 47th birthday is in mid feb., and since I was 18y/o(130lbs.), I've only gained 10lbs(now 140lbs), and it's muscle weight! With no heart problems, and little to no regular exercise. Even when I exercise everyday for wk or 2, my body has responded positively in a very short amount of time. Granted, I've always had jobs that require me to be on my feet all day, and I retired from the food service industry when I was 39-40. I never changed my eating habits except cutting out as much processed sugar, fast food, & fried food from my diet over almost 2 decades ago. And limiting starches & grains to lunch or breakfast(and in small portions). And I've always eaten fruits & veg alongside the fatty proteins. Ppl that I have cooked for all these decades have always felt guilty when they find out that I use butter or bacon fat to prepare their meals, but when I share with them how long I've enjoyed fat, and avoided sugar instead, they either began doubting their past food choices, or giving me grief for 'having good genes' or 'a fast metabolism'. As someone with many friends who struggle with either their weight, or diabetes, I find it heartbreaking how many ppl have bought into the 'low fat lifestyle' deception while consuming unhealthy amounts of sugar everyday. a few yrs ago, I cooked dinner for a friend who was not only overweight, but was struggling with brain fog due to poor sleep. I made him smoked beef ribs, and bok choy blanched in chicken stock. No starch. no grains. He called me after he got off work the next day, and told me that he had gotten some of the deepest sleep he had in yrs. With no food coma after he had gone home that same night I made him dinner. So, I offered to teach him how to cook(esp. veg.), and after a few lessons, he began including moderate amounts of animal fats into his daily intake along with avoiding sugar & grains. Eating smaller portions & regular exercise. I didn't see him again until 3mos. later, and he had lost almost 30lbs., and was getting deeper sleep more consistently. He stopped consuming soda & ice cream as well. I'm so glad I didn't allow my nutrition instructors to coerce me into the 'lowfat lifestyle' back in school. To anyone who is struggling with their weight, or diabetes, my heart goes out to you. I wish you only success in your weight loss journey, and I sincerely hope that you can break away from processed sugar, and enjoy animal fat again.

@@vickyanderson1453 My atkins diet lowered my ldl by 50 points but it's still 150. That doesn't particularly worry me as my triglycerides are 45 and my hdl at 80. A niacin supplement helps both to stay where I want them. My blood pressure went up years ago but my doctor was unable to find a blood pressure medication that didn't raise my blood pressure. I had to see a cardiologist and he gave me a blood pressure medication that had a diuretic in it. It worked well until that medicine wasn't available so my doctor gave me the same medication without the diuretic and it didn't work at all so now I simply take a diuretic and it keeps my blood pressure where I want it. I've held my current weight for 30 years now and it's close to where I want it. As long as my triglycerides and hdl are good I refuse to worry about ldl. At 75 as long as I feel good and can remain active I've remain on my low carb diet. I allow myself 12 net carbs per day so it's close to a carnivore diet and it works well for me.

Really? Why? Nothing he said gives us any explanation as why we are to avoid sugar. Hey, sugar causes the inflammation. Does it? What makes you say that? And is that study perhaps flawed as well? Studies on people's diets are notoriously poorly constructed and very hard to carry out. People lie, they're not very good at remembering what they ate, they're not very good at judging portions, etc. Just throwing out that sugar is bad doesn't help anybody. Plenty of studies to suggest vegetarianism is the way to go. However, those studies tend not to take into account that people who go vegetarian are making a lifestyle change that people who are eating meat don't. And in doing so take better care of their health all around. The average Joe doesn't give a s*** about their health at all. So it is an unfair comparison. There is no definitive study proving that sugar is causing us to coast to an early grave. What is causing most people to coast to an early grave is overeating. And overeating people tend to overeat sugar, and lots of it. Because people who don't give a s*** about their health tend to eat lots of processed food which includes sugar. Too much of anything is going to cause you problems. With all things we consume it is the dose that matters, not the thing itself.

Thanks a million for this video, Dr. Hampton. It addresses how badly we were misled about fat. I remember the TIME magazine cover with the CHOLESTEROL banner and the bacon and eggs forming a frowning face. Sadly, I bought into it, and I was scared away from butter, bacon, and eggs for years. But I WASN'T scared away from the real enemy - sugar! As a result, in spite of all my efforts to avoid fat -- eating margarine and all of those butter "alternatives", cooking with "vegetable oils" (seed oils), and looking for low-fat or no-fat alternatives (fat-free yogurt, for example), my health continued to be destroyed by sugar. It's mind-boggling how harmful Dr. Keys' position was -- that the public was lied to about the incredibly destructive impact of sugar on our health, and how the anti-fat myth maintained such a strong grip on us for so long. So much needless suffering resulted. I didn't know about the Minnesota study, so I'm grateful to hear about it. And I'm grateful to have bacon, eggs, and REAL BUTTER back in my life! These three foods helped me kick sugar to the curb!

I think it all boils down to this: we went from a meritocracy in the hunting societies to an elitocracy with the agricultural societies, because in a hunting society the best hunters are the elite, but in an agricultural society, the elite NEVER do farmwork. Agricultural societies are ENTIRELY BASED on getting other people to serve the elite. With proper diet, all that falls apart -- the "elite" aren't insane and don't want that to begin with, and the people aren't weak and insane carbohydrate crunchers. I think an unwritten part of history is the true ruling classes keeping the common people away from the meat! "These lentils shall be for you meat" or whatever in the Bible and then the Indians' whole take, for ex's.

I have struggled (and still struggle) with my weight and cardiovascular health, despite trying to eat healthy and getting a lot of exercise. I work in a train repair shop on my feet all day. I also ride my bike about 50-70 miles a week, and I do basic resistance training 3 days a week (nothing outrageous, just stuff I can do in the basement with a few dumbbells and a rubber mat on the floor). I have come to a conclusion, from all the different diets I have done. 1: Highly processed/manufactured food is the enemy. 2: See number one. That means eating whole or minimally processed foods is key. So that comes down to not eating lots of refined carbohydrates, but also not eating a lot of Highly refined meat products either. What I'm saying in summary is that eating a pork chop or a steak or a chicken breast is not bad for you, but eating hot dogs or bacon might not be a good idea. Now, as far as bacon is concerned, it depends on how the bacon was cured. If it's done through all natural processes, that's one thing, but if it's full of chemicals like nitrates and preservatives, it's no good for you either. Likewise, eating homemade sourdough bread is fine, but refined white bread is not. Eating an apple or orange or banana is fine, but eating a Dunkin' Donut is not. I would also think that eating a good variety of whole foods (meats, cheeses, fruits, vegetables, nuts, whole grains) as opposed to fad diets of only eating meat or only eating plants (and yes, I've done both in the past) is key. The problem with that is even making all those efforts still exposes you to hormones, pesticides, and chemicals injected into and/or sprayed on the animals and crops.

28 years ago I was using a natural therapist for a health related issue and was put on a no sugar diet. After having no sugar for 6 months it seemed to reset my taste buds & my tolerance for overly sweet things. Since then I only use half ( sometimes less ) of the recommended amount of sugar in baking recipes.

What people also need to be informed of is that your body treats any and all carbohydrates as sugar, as that's what they are broken down into. Some more complex than others, but glucose nonetheless, so simply removing refined sugar from your beverages really isn't going far enough.

I find it amusing that the weight loss surgery TV show tells the patients not to eat carbohydrates. Then you see them eating salads. Excuse me, but carbohydrates are more than just candy, sugars, cakes, etc. Vegetables are carbohydrates! The difference is their carbs are starches instead of sugar, but starches break down into sugar. One of my observations is that we don’t have a clue on portion sizes. Restaurants in the US have servings much larger than in Europe and we’ve become accustomed to being overfed.
@shiNIN4210 күн бұрын
It is still a great step but indeed, many of us should go beyond. I started with low-carb back then when I started to think about my health. Then came keto and it was still too sugary to me but I never will go as low as some people... Each to their own. My SO, on the other hand, can't eat low-carb but he is health-conscious and seems to thrive on his high-carb. He doesn't use added sugar, seed oils and highly processed items either. Our healthy diets are quite different but there is some common ground. Complex sugar (and simpler sugar from different sources) may feel totally different too, I always noticed my body handles some starches better than the same amount of carbs from quick sugar and animal sugars feels way better too. So carbs aren't all the same but to some extent, yes, they are all carbs and overdoing them isn't a good idea. Whatever that means for the one in question.
@shiNIN4210 күн бұрын
@@maggiegarber246 Yes I see that so many times... People often act like vegs aren't mostly carbs, at least in most cases. (Cucumber is basically solid water, low nutrient, low everything... Still a lovely juicy thing...) A relative of mine got diabetes and was shocked to learn from me that vegs are carbs. Vegs may have starch but they very often have lots of sugar for their energy content. That's why so many vegs are quite sweet (especially for someone who isn't used to added sugar and their sweet perception changed) , that's a significant amount of sugar. I personally can't do anything with portion sizes, it makes no sense to me, I eat as much as I need for satiation - but the amount depends a lot on my food choices. It's a very bad idea for many of us to try to get satiated by carby food. I always easily managed that but it was serious overeating. Even if it's not a problem for someone, there may be health concerns, of course but not satiating or too triggering carbs is a problem for many.

I've never believed that saturated fats are bad. I've always blamed seed oils and sugar for the common age related illnesses we have today. But I'm glad to finally see science catch up as those claims made in the 50s and 60s were mostly subsidized studies by the food industry as the american hearth association took some money from the seed oil industry.

I haven't used seed oils for cooking for 30 years. Also cooking in olive oil is a relatively recent thing in Italy. They used to use olive oil in lamps, so electricity freed up all that olive oil and I guess they tried it in cooking. Previously they used lard. So if you have to fry or saute anything for an Italian recipe, you can use lard.

Please let’s not forget the role of medication in heart disease as well. Some medications cause issues with the heart as a side effect. I had my first heart attack in my mid 40s (came out of the blue) and have had 5 more since then and have had 4 stents implanted. As a cook (professionally) I have always eaten healthy, no fast food but also enjoyed bacon and sausage, never been a great consumer of sugar and no family history or heart problems, my grandparents lived into their 90s. The number of cardiologists who’ve told me it hereditary and bad eating have driven me crazy over the years and regardless of what I tell them, I don’t know what I’m talking about. I’m now 60 and still eat bacon, sausages and use butter. It’s medication that has caused my heart problems as side effects, not unhealthy eating. Also I’m not overweight and never have been.

A realistic solution to eating good food is to simply eat as close to natural as possible. Real vegetables not processed or canned (sugar is often added to canned goods). Real meat, less sausages as they are often treated with Nitrides (I think that's what it's called). Real dairy products such as milk (if one is not lactose sensitive), yogurt (without sugar added), cheese etc.

I wouldn't say based on that MN study that lower cholesterol causes more deaths, seed oils have a lot of toxins which may poison your liver to cause lower cholesterol production and also poisons numerous other organs and your immune cells with cyanide compounds inhibiting respiratory metabolism leading to more cell death and unchecked infections fueled by sugar, but not necessarily demonstrating that lower cholesterol led to higher mortality. Other studies do show that is the case and I would personally much rather have a high cholesterol than low cholesterol, but you don't want to fall into the same trap of correlation=causation. Seed oils cause lower cholesterol and seed oils cause higher deaths, but not necessarily lower cholesterol being the primary cause of increased mortality. Seeds are a plants children and are intentionally poisoned to prevent being eaten and killed by animals.

Since I was in my twenties, I've been told to lower my cholesterol by not eating butter and a host of other kinds of foods. Three of those past doctors who warned me to eat lean foods have now passed away and I'm still alive. Why don't they update and teach this information in medical school? Is it because it's more lucrative to treat ailments rather than curing ailments?

There was a Sydney one too, same set up, same outcomes. 973) Control Group Diet: The control group was not given any specific dietary advice and continued to eat their usual diets, which were relatively high in saturated fats. Sources of saturated fats included: Animal fats (e.g., butter, fatty meats). Processed foods containing saturated fats (common in the 1960s). This group served as a baseline to compare against the intervention group. Intervention Group Diet: The intervention group was instructed to replace saturated fats with polyunsaturated fats, specifically from safflower oil and safflower oil polyunsaturated margarine. Safflower oil is very high in omega-6 linoleic acid, a type of polyunsaturated fat. Key Point: Saturated Fat in Control Groups In both studies, the control groups consumed diets that were higher in saturated fats because this was the norm at the time. The intervention groups, on the other hand, were asked to replace saturated fats with polyunsaturated fats (corn oil in the Minnesota study and safflower oil in the Sydney study). Why This Matters The control groups' consumption of saturated fats allowed researchers to compare the effects of: High saturated fat intake (control group) vs. High polyunsaturated fat intake (intervention group). The surprising finding in both studies was that while the intervention groups had lower cholesterol levels, they did not experience a reduction in heart disease risk-and in some cases, had higher mortality rates. This challenged the prevailing belief that simply replacing saturated fats with polyunsaturated fats would improve heart health.
@philhunt16816 күн бұрын
Taken from the study: However, some participants began substituting polyunsaturated margarine for butter after their coronary event.33 Because the research team made no effort to alter the PUFA or SFA content of control diets, such dietary changes were allowed to continue

hey doctor , is tahini butter safe to consume? many thanks
@DrTonyHampton16 күн бұрын
I don’t personally use it, but here are some pros and cons of Tahini Butter: Pros 1. Low in Carbohydrates: • Tahini is naturally low in carbs, making it a keto-friendly option that won’t spike blood sugar levels. 2. Rich in Healthy Fats: • High in unsaturated fats, which are essential for maintaining ketosis and supporting heart health. 3. Nutrient-Dense: • Packed with minerals like calcium, magnesium, and zinc, which are important for bone health and muscle function on a low-carb diet. • Contains B vitamins like thiamine, which supports energy production. 4. Good Source of Plant-Based Protein: • Complements other keto-friendly protein sources, especially for those who include vegetarian options. 5. Versatile and Delicious: • Adds a rich, nutty flavor to keto recipes like dressings, sauces, dips (like keto hummus), or even fat bombs. 6. Contains Antioxidants: • Loaded with compounds like sesamin and sesamol, which can reduce inflammation and support overall health. Cons 1. Calorie-Dense: • While its fats are healthy, tahini is calorie-rich, so portion control is essential to avoid overeating and stalling weight loss. 2. High in Omega-6 Fatty Acids: • Tahini is rich in omega-6s, which may promote inflammation if not balanced with sufficient omega-3s (e.g., fatty fish or flaxseeds). 3. Potential Allergies or Sensitivities: • Made from sesame seeds, a common allergen for some. Additionally, some people may find it harder to digest due to its fat content. 4. Phytate Content: • Tahini contains phytic acid, which can bind to minerals like zinc and iron, reducing their absorption. This is less of a concern on a nutrient-rich keto diet but worth noting. 5. Hidden Ingredients in Store-Bought Tahini: • Some commercial tahini products may have added oils or sugars, which are not keto-friendly. Always check labels for clean, simple ingredients. How to Use Tahini on a Low-Carb Keto Diet • Use it sparingly in dressings (e.g., lemon tahini dressing), marinades, or dips. • Combine it with high-fat ingredients like olive oil or coconut cream for a richer texture. • Pair it with omega-3-rich foods to balance your fatty acid intake. • Opt for unsalted, minimally processed tahini to avoid added sugars or oils. Tahini butter can be a fantastic addition to a keto diet when used thoughtfully. It’s nutrient-dense, flavorful, and versatile, but portion control is key to keeping it in line with your macros.
