I miss Jungle curry so much. Where I live its very hard to get some of the ingredients that make it so unique and tasty. When I was on holiday in Bangkok I had to visit Gaeng Pa Sriyan for dinner three nights in a row it was my favourite dish.

I gotta tell you Marion, I saw this video this morning and immediately decided I'd make this today HOWEVER, I don't have nearly any of these ingredients and am also a vegetarian. SO I decided to make this a sort challenge for myself. You see I don't have access to many of these things but what I do have access to is authentic Mexican, Central American and Korean stuff. So I swapped out about half these things with ingredients from those places, used a vegan miso in place of shrimp paste, used soy sauce in place of fish sauce and cauliflower and garbanzo in place of meat and oh my goodness it's so good! It's of course not the same thing but it's the equivalent of what I could do with my resources and I'm so proud of that! That's what I love about culinary culture, exploring and making things work with what you have. Thanks so much for the recipe, I'll make the real thing if I can ever get access to the right stuff but for now I'll just enjoy my Mexican Guatemalan Korean "Thai" Jungle Curry!

Beautiful. Been trying to find out the name of this curry in a while. My maternal grandma is Thai and unfortunately mum never learnt how this was done except that it involved a lot of chilies both green and red and dried. What I remembered though was they sprinkled toasted glutinous rice powder on it before serving. May be a specific preference.

Jungle Curry (แกงป่า) is always a bomb. As a Thai people, my aunt usually makes this curry for me. Mine is lighter than yours, and maybe less salty, but still it's so salty and massively explosive of flavor. I really love that. Thank's for sharing your (and your auntie's) recipe

Okay! What is the actual name of the chili's used?? I ordered dried Thai chili and the dish was inedible it was so spicy. I was SO excited to make this (multiple ingredient amazon order!!) and the flavors aside from the painful heat were beautiful. My husband who likes spice made himself pasta. HELP! One of my best Thai experiences was trying "Evil Jungle Prince" at Keos in Oahu, Hawaii. This dish included coconut milk but was literally the best thing you ever tasted. So a ridiculous amount of chilies, coco milk and kaffir lime leaf were the requirements. Jasmine rice, shredded won bok and of all things ITALIAN basil (Keo thought it was a better addition than Thai basil). Keo is no longer in Hawaii but he is dearly missed. "Keo Sananikone"

Easy to grow in the garden without taking up loads of space. Don’t be fooled by their large size, they have a milder taste closer to leeks.

We eat that type of eggplant here in Sri Lanka as well, but we usually pound them a bit and remove the seeds from the middle and only cook the flesh because the seeds add a nasty flavour it's not just bitter..

This looks just like the Malaysian 'asam pedas', but without the tamarind juice. Yeah, the ingredients are mostly the same. We usually put a lot of 'daun kesom' instead of basil. Wah, now i can add basil in my asam pedas.

Hi Marion…so I made this jungle curry… oh my…. Don’t use dried Birdseye chillies…blew my head off! Made it again with fresh chillies as I couldn’t get dried large ones, delicious, many levels of flavour, definitely recommend your viewers make it….but without dried Birdseye chillies 🌶😂🥵😀😀

Traditionally would use the game meat as the protein in this curry or any animal that Thais found in the jungle (snake, wild bird, boar, etc) so Thais call jungle curry. A lot of herbs and spice to cover the smell of the meat. But presently, any meat is fine too because no need to hunt in the jungle anymore.

Hey just a fyi and I'm not sharing you do this BUT I am really allergic to normal shrimp my throat and it ears itch and sometimes I'll get a rash if I touch it even. BUT when I eat dehydrated little shrimp, and shrimp paste, it never happens.
