if you cut the last 1/4 inch or so off the green onion (including the root) then plant it in some soil it will grow back. You can do it over and over or just cut off the green tops to use. I keep a long skinny planter in my kitchen window for growing green onions. It's super convenient.

My wife makes pickle rolls with sweet pickles. She lays out three pieces of thin sliced ham, spreads cream cheese on it, then places the baby sweet pickle in there and rolls it up. She refrigerates and then slices. I can’t eat the sweet pickles anymore so I took dill pickles and blitzed them up in the food processor. Blended that with cream cheese. I added my favorite zero carb sweetener. I just spread it onto the thin ham lunch meat. So freaking good. 😂

I made these roll ups (with dill pickles) long before I was low carb. They were always a hit on food days at work. I love the idea of making the pickle cream cheese spread!

Our friend had us over for supper and she was so sweet. Instead of lecturing us about keto, she revised her whole meal just for us. She said she had fun 🤩. Anyway, she made an appetizer where she took cream cheese adding some ranch seasoning and spread it on deli ham then wrapped the ham around the scallion onion. We loved it and still make that for finger foods. Also, I agree about the pickle recipe as a chaffle. How genius! 🎉🎈

What if you were to put all the ingredients in the blender with the pickles (after removing the liquid) and used a large tip and piping bag...to achieve more cylindrical "fries"? (Just a thought)

We make a cheese ball/dip with the green onion chopped, cream cheese, bacon or chipped beef...mix together and put it on celery sticks to eat...delicious!! I am going to try the pickles they sound good and I like the idea of putting them in the chaffle maker. Thanks ladies!!

Low Carb Love says that baking powder helps with crispiness. It works on chicken wings, so perhaps that is the reason.

I saw a really interesting snack yesterday. Low Carb Love "chips"..... made with ground chicken, seasoning, baking powder.... rolled flat between parchment paper and baked ... it looked crispy and yummy. Would love if you could try that recipe!

The pickle snack makes me think of fried pickle slices which are very yummy, but breaded and too many carbs. I may try the pickle recipe but make silver dollar size blobs rather than rectangles. TFS these 2 recipes! 🙏🌸🤓

Growing up there was a drive in that sold fried pickle chips that were just crazy good dipped in ranch but they had a generous amount of paprika in them so were a bit spicy, which was amazing with that cool ranch!! Im totally doing these and adding that paprika!!

If I get a chance to try the pickle one, I think I'd start with a jar of sugar free pickle sweet relish. Can't remember the brand but it's a big name. I can't decide if it will have more or less yield than a blended jar of pickles. Thanks for the recipe, ladies!

Good thing you used that extra paper towel! I think making them smaller and maybe freezing for a few minutes might help keepmthem from spreading. That second one is … weird. Of course, that might be predicated on the fact that I don’t like onions unless they’re cooked translucent. 🤪
