I love how the flour companies used to put cute prints on their cloth flour sacks during the depression. They found out people were using the sacks to make kids clothes and quilts so they put cute prints on the sacks. We don't get that kind of caring from corporate America anymore.

The fact that the “people who make decisions about education” no longer believe life skills are important, says all we ever need to know about the quality of “their” decisions. Especially at a time when most kids have no way to learn from their parents if they even have any. Think generations have now graduated without home ec, and those parent(s) have to work ~3 jobs just to keep a roof over the kids’ head. Society is in a very sad place. 😭😭😭

I made both of my kids take home ec and both started off with exasperated dramatic everyone will laugh at me sighs and both ended up with is being their favorite teachers and favorite memories. Especially the “ that class is for girls” and losers” son who immediately learned that the girls were smitten with the soccer star who happily ate any and everything they wanted to bake with him. He’s a remarkable father and husband and I credit much of that to his life skills, humaning skills, sewing and kitchen skills all learned in home ec. So thank you

I used to work in an office and I made cakes for each person’s birthday. I used Betty Crocker cake mixes and decorated the cakes to match each person’s personality and likes. This took me quite a while. I did this for six years. One day I accidentally heard people complaining that I used cake mixes instead of making the cakes from scratch. They didn’t know I was within hearing range. I never made another cake for coworkers again and moved to a different job. Needless to say, I don’t make cakes at my present job.

I hated to hear that schools were discontinuing Home Economics classes because they really helped me learn more about cooking. Fortunately I also had a mom, stepmom & Granny to teach me at home, but not everyone has that. When I was 12, I was cooking family dinners. Not everyone gets to learn, & I feel bad for them.

Although Betty Crocker was not actually one woman, what I took away from this episode is that she was a collaboration of many. During that time I'm happy to think that Samuel was smart enough to hand the riegns to Marjorie. Behind the scenes this was a woman driven business that became extremely sucessful. I would imagine they were not paid what they deserved but groundbreaking at the same time. Thank you Bailey and staff for this story.....PS I had home Economics in school and also a business class that tought us checkbook balancing, taxes and following the stock market.....I date myself, but agree we should all know how to maneuver in this life as best we can.

In high school I signed myself out of calculus, and trigonometry and signed myself up for accounting classes, because I knew I needed to know how to properly balance a check book more than imaginary shapes in the sky and advanced mathematics I would never use. I also took all three levels of home ec classes because I knew I needed the basic home skills not algebra. This was in 1986 g 1987. I got a college degree in a arts line of study so...I didn't needed those advanced maths, I needed to balance my budget to pay for bills plus college expenses. I just wish schools today would realize that most students are not even wanting to go to college .. they want to learn woodworking so they could open and run their own cabinetry making companies Imo we need to recognize, as a society that while we do need doctors . We also need trained car mechanics and educated skilled appliance repair persons

We still have my moms Betty Crocker cookbooks from the 50s 60s 70s and 80s. It’s interesting to see how the recipes have changed over the years. Like Jello deserts we all the rage in the 60s lol. When I look at those books with their vanilla extract stains still there it brings back great memories of her.

It’s true. A representative from Quaker Oats saw Anna Cooking and making pancakes at a country fair, and drew her picture and used her likeness to to make a “caricature “ of her and named the caricature “Aunt Jamima” And I’m sure if all of the “do gooders” of the world were to ask any POC … they wouldn’t want the pictures or images of Aunt Jamima, Uncle Ben, Famous Amos … etc… taken away. There is very little in the way that POC are represented… ok, modernize them, but leave them there.

Great story! I had home ec in high school, and really grateful I did. My 18 y/o daughter just told me the other day she wish they would offer not only home ec, but classes on taxes, voting, budgeting, basic car care and home repairs (basically early adult classes) in high school, make it mandatory. My grandmother had two daughters and would remove stitches and remake their dresses for school from the flour sacks. She said that during the struggle of the dust bowl people assumed they were still wealthy ranchers because the girls had so many nice dresses. They had two, one for Sunday one for school, both made from sewing and redesigning the same flour sacks. I can’t imagine, my sewing skills are hysterically comical.

Being a Minnesota native, I've known who the "real" Betty is since I was a kid. Even so, growing up with Betty was great. In the 60s and 70s, the Betty Crocker Cookbook was still the holy book of cooking. That, and just about anything in the grocery store with the Betty Crocker name on it automatically meant quality to a lot of people.

Funny thing about the cake mixes: it's true that when they first came out, they only required you to add water. But housewives at the time complained that they were actually too easy to make and felt guilty that it was so low effort, so they changed it so that now it requires an egg as well. Lol

In Sweden we have hemkunskap (home knowledge) and everyone has it during a few years where you learn about everything from laundry to cooking food and how to be climate smart. It was most people's favorite class from what I remember haha, ly bailey:)

Then in my senior my history teacher assigned all seniors the budget project that I explained. I also had a personal finance class that taught the basics of finance. I was lucky to have teacher that willing taught budgeting and that my school had a class all about finance. If I hadn't has the opportunities in senior I don't think I would even remember how to fill out a w2 form. Because that mandatory class was so long ago

The Depression Cake is also known as a Wacky Cake. When making the Wacky Cake if you remove 2 Tblsps of flour and add an additional 2 Tblsps of Cocoa (I use Hershey's Special Dark Cocoa) your cake will come out super moist and very dark chocolatey. My family has been making this cake recipe since the Great Depression. There was also a white cake recipe known as a lightening cake that has no flavoring in it yet comes out tasting fabulous. Both of these cakes can be made into layers , or Bundt cake.

I'm not sure if this is correct but it's what I found when searching: Ingredients: 1 ½ cups all-purpose flour 1 cup white sugar 4 tablespoons unsweetened cocoa powder 1 teaspoon baking soda ½ teaspoon salt 6 tablespoons vegetable oil 1 tablespoon cider vinegar 1 teaspoon vanilla extract 1 cup water Directions: 1) Preheat the oven to 350 degrees F (175 degrees C). 2) Sift together flour, sugar, cocoa powder, baking soda, and salt into an 8x8-inch ungreased cake pan. Make 3 depressions in the flour mixture. Pour oil into one well, vinegar into second, and vanilla into third well. Pour water over all, then stir with a fork until well blended. 3) Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 40 minutes.

Yes that's the recipe. When you sift your flour remove 2 Tablespoons. Then for your Cocoa I use Hershey Special Dark add 1 additional Tbls if making an 8x8 or 2 if you double to make a 13x9. I have made this cake even in the Backcountry wilderness in cast iron pans on a campfire but you need to adjust the recipe for altitude. It's a great recipe and my family has been making it for generations.

Thanks to Betty crocker and other brands that have easily available cake mixes, I was able to grow up with having a handmade birthday cake every year by my mother, she would make the frosting by scratch and then use the cake mix box for the cake. And this inspired me to learn how to bake from scratch and continue cake decorating like my mom did and now I've made a career out of it. So this was a very interesting video to listen to because I wouldn't be who I am today had I not have cakes handmade for my birthday. I'm very interested to know about Marjorie and what she did after she left Betty crocker, I'm on a car trip so I may have misunderstood but I believe you said she made her own business after leaving Betty crocker. What business was this how well did it go. I would love any kind of feedback you can give me about this!💜

I remember when I found out that “making a cake from scratch” didn’t mean making it at home using Betty Crocker…it wasn’t that long ago either. Like when people asked me if I made my Betty Crocker cake from scratch I’d say “yeah, can’t buy this” bc I thought they were talking about the cake being already made when I bought it! Listen, I added egg, milk and butter or whatever, dirtied pans and mixed things together so that ish felt like real “baking from scratch” to me 😭

I also feel like this story could be a Netflix series that could also help with practical things like the Depression Cake ( my Mom and I still uses a similar recipe for when we run out of eggs and milk) . I took it in Jr high school. I dont remember it being in an of the high schools i have been to. It was a fun class. i learned so much and still today, it helps me out. it was from home, cooking to taking care of your own child. I wished they had it today for these kids.

I have a vintage Betty Crocker cookbook that used to belong to my mother. She gifted it to me in the 80s and it's one of my few sentimental treasures from her. I feel like by the time I was born, everyone understood Betty Crocker was a concept rather than a person, but I didn't know it was initially a man's idea! I love this - lots of women writers used a masculine (or genderless) pen name to brand themselves, but this is the first time I learned of a man doing that!

The depression cakes aren't bad. You don't really taste the vinegar it's like a Red Velvet cake, which also has vinegar in it. The vinegar gives it a slight tangy flavor that you wouldn't expect to work but it does.
