- 4 eggplants
- 2 peppers
- 2 cloves of garlic
- 1 onion
- 10 cherry tomatoes
- 50 grams of breadcrumbs
- 50 gr of Parmesan cheese
- 200 gr of mozzarella
- Salt, pepper, chilli

That looks really good and if I skip the bread crumbs would be perfect keto recipe , I’m a Persian born American and in our country we do lots recipes with eggplant , one is stuffed one , we make it like whole pepper stuffed, add meat and lots fresh herbs no cheese and cook in tomato sauce with lots seasoning !
