The Cornstarch is the main ingredient that makes the chicken crispy. Try this recipe without the cornstarch and see if that chicken is crispy.

the cornstarch and flour ratio is everything for the batter and dry mix. I watched about a month's worth of chinese frying chicken, and I noticed several common variables. I've been working on my own shit since then, and it's smacking... buttermilk is bs in my opinion.

If people saw what went on inside of a chicken processing facility they'd all clean it off. I'll tell you what I know for a fact...it's 100% chance if you've ate alot of chicken without cleaning it you've ate alot of chicken from off the floor right into the packaging you got it from at the grocery store. Forget 3 second rule, it's a 10 second rule in those places.

Looks good. A couple of things though that you don't need to do. You don't need buttermilk. You don't need baking powder. You don't need vodka. for dry mix, mix your spices together first. Then add your cornstarch and mix very well. Then add your flour last. The spices adhere to the cornstarch better than the flour, and then the flour adheres to the cornstarch. Use 1/3 of cornstarch that you used for flour. so if you used 1.5 cups of flour is 1/2 cup. If you want a really crispy chicken, you need a stickier batter. The batter you used was thick crust based and it's not as crispy as it could've been. my chicken takes 2/3 days, but it's worth it.

Vodka is used in a lot of batters and sauces the flavor is muted easily and the alcohol combines makes seasonings soluble and dissipates easily leaving it much lighter than water.

It's so strange to see all these people that come up with all kinds of recipes to fry chicken. This one, by far, is the most unique and overly complex one, with too many ingredients and steps to frying. I'm a senior citizen who recalls my mother, grandmother, and grandfather frying chicken in lard or bacon fat with just flour, salt and pepper. And it was some of the best tasting, crispy chicken ever. Now, today, you gotta have so many other ingredients, i.e. buttermilk, corn starch, baking power, flour, water, liquor, all sorts of stuff! All this just to fry chicken! Yes, indeed! Too much!😊

It's the combo of baking powder and cornstarch that's adding the crisp. And the chicken should rest before frying. The dipping order From brine to flour batter to wet batter to rest for 10 minutes to hot oil. IMO

Scientists and chefs say don’t wash your chicken. The heat from cooking will cook all of the bacteria out. By washing it, you actually increase the risk of spreading bacterias like salmonella all over. Cook your chicken all the way!

I don’t know what the hell that’s called but most of us don’t have that but we can follow your recipe and have that delicious chicken, and I always put in a crap load of cayenne pepper because I love spicy everything but spicy chicken skin I’ve gone to heaven.
