Chef John, I'm 16 years old and I usually have to cook Thanksgiving dinner. I've never cooked a turkey before because I would have one of my old friends come to my house and cook it for me. Except this year, he left to New York and I had no clue what to do for a turkey. And our survey said ... a solid 7 out of 10. Simple recipe, tasty, but cooked unevenly. The top was nicely done, very moist and tender. The bottom was underdone to the point I had to use a knife to dislocate the joints. I attribute this to sitting the bird on a bed of veggies instead of on a rack. Too much moisture and no air flow under the bird. Still, this may very well become my goto recipe with one added ingredient: the rack.

Thank you for this recipe. I lost the knack of cooking turkeys a few years back to the point where I just gave up. I can cook a chicken perfectly every time, so that's what I started doing. Roast chicken and a ham, but this year I want to go back to turkey and this is the most straight forward, simple and stress free recipes I've found. Definitely going to try it out in a couple weeks.

Hey, guys, the turkey was a big hit! My sister even redeemed herself a little by helping me prepare the bird some. The turkey tasted even better the next day since it marinated in its juices overnight. I hope everyone else had as enjoyable a holiday. Happy Thanksgiving!
