Recipes:
〰️ Chorizo tofu: itdoesnttastelikechicken.com/...
I modify this using whatever spices I have on-hand, in this video I didn't use cloves or cumin, but instead added smoked maple salt (amzn.to/3AjqaFw). I also sub the oil for water (1:1) in this recipe.
〰️ Quinoa & rice:
2 cups rice (rinse 3x)
2 cups quinoa (rinse 1x if your is not pre-rinsed, it will say on package)
4 cups water
Add all ingredients to Instant Pot and press the "Rice" button. Once it has finished cooking, let it come down from pressure naturally for 10-15 minutes before opening.

Okay so I was intimidated by your prep work and rolled my eyes at peeling all those cutie tangerines but,by golly, I did it and they all got eaten, not one shriveled up and was tossed. A little over-the-top but worth the effort. Thanks! 😊

I love meal prep vids, but what I really never learned was meal/menu planning, that is how do you decide what you're going to eat and buying at same time, etc in order to make the most use of groceries, etc? My mom simply bought convenience foods when I grew up so I never learned. My stepmom was from a farm and could plan an entire month ahead, but sadly at that point I was a disinterested teen and never asked her to show me.

@@suburbohemian It definitely takes a bit of planning until you’re in a routine. 😃😃 That’s something I teach in my Meal Prep Course, because it’s absolutely an important part! A good way to start is to find recipes you like. Once you have some favorites it makes the planning process much easier!

You’re welcome! Yes that one I actually used to follow her recipe exactly but tried it without one time and realized it doesn’t taste any different without the oil. 😄😄 Now I’m trying a similar liquid base with different spice combos and it works well to do that too. Enjoy!

For beets, when they are done, I put them in cold water. I then use washing up gloves to remove the skin. The skins come off easy and you don't have stained fingers! ❤

I tried the quinoa and rice together last night in my Instant Pot and it was perfect! My kids and husband prefer white rice over quinoa and brown rice, so this is a great compromise.

Super super helpful! If you do not like celery, you can skip coriander in the herbs (related to parsley, too). My adult children inherited the 'celery tastes bad' from Grandma. They have different sensory issues and GI issues, too. So no bell peppers. Im Going to try your beets, add carrots raw for snacking instead of celery and roast that at the same time as the beets. Sweet potatoes are nice in slabs (end up soft, so careful removing after roasting) or cubed with your herb mixture, minus coriander. Will try the quinoa/rice in the rice cooker. Will try the freeze tofu first (hardest block you an buy?) trick. This will help so so much. I already batch cook, but separating out will help me not to waste any during dinner prep just before meals, too. One of my adult children will bring home quality next day expiration salads and sandwiches occasionally from her job which is super nice on the grocery budget. It means my plans might get shifted, though. That daughter has allergies to many pollens, so can eat very few raw fruits or vegetables. Thank you for this great video content. Lovely delivery and enjoyed watching the reminder to make snack celery (carrots) for the frig!❤

Great point about the celery and coriander! (I have a friend with that same issue.) For the tofu, yes, I always look for extra firm, I find that one is best for freezing. So nice one of your kids brings some goodies for you, that's awesome. Enjoy the snacking veggies and let me know how the quinoa/rice turns out! 🤗

Absolutely eat stalks of broccoli but peel the tough outer skin off of them first! I cut them into strips. The stalks are sweet and soft and delicious even raw as a veg for dip or cooked. I like to fry my beets in evoo and fresh garlic add a little water and cook for about 20 minutes then salt and pepper to taste.

Okay, I just made the chorizo tofu…OMG it is fab! The flavors are spot on. I did mine in my air fryer at 390 for 15 mins turned out great! Thank you so much for sharing this recipe for tofu!

Isn’t it great!? Sam (It doesn’t taste like chicken) has some of best vegan recipes out there. I’ve modified the recipe many times (I keep the liquid ingredients the same but use different spices) and it always turns out great! So glad you enjoyed it as well. 🤗🤗

I got some meal prep done but not as much as you. I ran out of steam! But I made breakfast "muffins" of diced potatoes, grated zucchini and enough just egg to hold them together. Made 12 and I will have breakfast for the week. I also cooked a pound of green lentils that I have a couple of ideas as to how I will use them, one of which will be a lentil loaf. And maybe a shepherd's pie! And I made a "tamale" casserole that will feed hubby and me for at least 2 meals. Depends on how much he eats! Thanks for your inspiration!

Quinoa is better after soaking for at least 1 hour but sometimes I do overnight so it sprouts. (It improves digestibility and cooks better and faster) It also has some kind of coating that, supposedly, can be toxic if you consume it especially if you’re eating it often so I do it just to be safe as we eat quinoa daily in place of rice and after it soaks I rinse it well, they say until you don’t see foaming anymore I think it’s called saponins, that coating that you want to rinse out as much as possible before cooking/consuming.

The one I buy is pre-washed so the saponins are already removed! (Costco brand, which says it on the package.) 😃 But you can definitely soak it first if you prefer.

You can use your veggie peeler on the brocoli stocks and they cook at the same time as the rest of the broccoli! :)

This is so generous of you to show us all of this ! Thank you so much. Inspiring and encouraging ! Also, what app do you use for your list ? Do you have a meal,plan prior to buying or do you choose recipes according to what you get? Tammy from Nutmeg Notebook says that sweet potatoes don’t need to be pierced (because they lose their juices) but Yukon gold potatoes need to. Thanks for the tip about memory of the IP buttons ! I covered my meat button with apple compote LOL !

Aww yay! I'm glad to hear it! For the list I'm just using the notes app on my iPhone! It's handy that you can add the little circles to put a check mark in as you complete them. I've also been known to use scrap paper and a pen though! 😅 Sometimes I have a plan prior to shopping, and I definitely recommend that to anyone who is new to prepping! But now that I have been doing it a while, I also find that even if I don't have a strict plan, I'm ok to come up with recipes "on the fly". Good to know about sweet potatoes! 🙌🏻🙌🏻 And omg GREAT idea to cover the meat button. 😂😂 I love that!

So glad to hear that! 🤗 The baked bell peppers I use mainly in salads and Buddha bowls or burrito bowls. My husband prefers cooked veggies so it’s easy for him to add those into whatever he’s eating as well. If I make pasta sauce I’ll throw them in there, they’re great on pizza and sandwiches as well. Oh and in hummus! Roasted red pepper hummus is delish! That prep lasts us about 5-7 for 2 people. 😊 And the video of meals I make with everything is coming next! I like to focus mainly on prepping veggies if I’m short on time for a prep, because I find myself least likely to want to prep them mid week. So if I at least have veggies ready, I can easily add them into dishes with less fuss. 😅

I'm a definite stalk eater! I don't know why folks don't eat it more! I love it was a raw snack, whereas the flowery bud part is better (to me) cooked cus I hate the raw buds getting stuck in between my teeth!

Awesome job! How long did it end up taking you to prep all that? I agree with the boiled water in the instant pot to bring things up to pressure faster. But, if you do this with potatoes (white ones at least) they won’t cook through in the time expected. I’ve even cooked turnip, taken the turnip out and dumped raw my raw potatoes in and the pre-heated pot from cooking the turnips also made the potatoes not cook properly. I guess that is why I followed my mother’s lead when cooking potatoes on the stove - add to cold water!!

Oh that’s so interesting! I’ve never done potatoes in the instant pot but that’s good to know. This prep took me about an hour and a half, some of that time was waiting for the tofu to finish baking.. and also it does take me a bit of time to move the camera, film, etc. so I think without that it would be much faster. 😊😊

Very satisfying, I'm sure. I ALWAYS eat the broccoli stems and actually prefer them to the heads. When I was a teacher in Turkey, I made a deal with a greengrocer to save me all the stems he cut off. He was always amused, and I traded him fresh cookies weekly. Win win!

Not very nice. Forget the veiled haters. You must have 'thick skin' to present videos on KZbin! Another food prep I like to remember is for my eldest who has RA, likes to cook, but it hurts to do knife workers pineapples, watermelon, grapefruit, etc.

If you run cold water into the pan of hot beets you can just rub the skins off with no effort. You just have to trim the ends when that’s done. I’ve been boiling beets for over 70 years and have never used a peeler.

OMG, I often feel so overwhelmed going into mealprep, so this video is perfect! I always eat the stalks of broccoli, but I do like to peel them. They do make my urine smell like asparagus, which is really gross.

Thanks, Kathleen! I have had our Hurom juicer for 11 years now but it still runs great! You may have mentioned it and I missed it, but what size Instant Pot are you using? Also I always peel the stocks on the broccoli before using them. I don't like the tough outer peel on those things. (yeah, I'm a baby)

Usually depends on what you prep! I find things like cucumber and bell peppers, once sliced should be used within 3-5 days. Other foods can usually last longer.. most items here would be 5-7 days. 🤗🤗

My IP rice setting is “low pressure”…this video looked like you had “normal” setting. Will “low” still work with the quinoa/rice?

Hi there, I am SO sorry for my delayed response!! I am cooking rice now and it IS the low setting! This is how it came with the IP, never changed it, so ours must be the same. 🤗🤗 So YES, it will/ does work! 🙌🏻🙌🏻

It depends on the person! For someone new to meal prep, YES, I 100% recommend starting with a plan, even before shopping for ingredients. Once they’re roasted the skin is tough & bitter, so removing them just makes them smooth and have better flavor! 🤗🤗

@@scentedlove2537 You're welcome! This has been one of my favorite tofu recipes for a while now. If it doesn't look crispy enough at 35 mins. it can even go a little bit longer. Just depends on your preference! Enjoy. 😊

This is great! Only issue is: sweet potatoes tuen into candy when they are baked and can lead to diabetes. You don’t have to take my word for, please do your own research on it.
