Written Recipe for Pithala bhakri
For pithala
Ingredients:
• For kharda/ thecha
1. Green chillies 10-12 nos.
2. Garlic 8-10 cloves
3. Salt a large pinch
• Besan 2 cups
• Salt to taste
• Turmeric 1 tsp
• Water as required
• Oil 2 tbsp
• Rai (mustard seeds) 1 tsp
• Jeera (cumin seeds) 1 tsp
• Curry leaves 10-12 nos.
• Onions 1 medium size (chopped)
• Hing (asafoetida) ½ tsp
• Green chillies 2-3 nos. (slit)
• Fresh coriander leaves a handful
Methods:
• First start with making kharda also known as thecha, by adding green chillies, garlic and big pinch of salt in a mortar and pestle and crush it well. Keep aside to be used later while making pithala and while serving.
• In a bowl, add besan, salt to taste, turmeric powder and 2 tbsp kharda/ thecha mix well and water as required to make a smooth and lump free mixture, keep aside.
• Set a wok on medium heat, add oil, rai, cumin seeds and curry leaves, sauté it briefly foe few seconds or until the rai and jeera crackles, further add onions, hing and green chillies, mix and continue to cook on medium flame for onions turn translucent.
• Low down the flame to low heat, Add the besan mixture and 500 ml water to the wok and stir continuously to avoid any lump formation. Cook until the pithala is semi thick in consistency.
• Cover it with a lid and cook for 5-6 minutes on very low flame, make sure the pithala doesn’t burn so keep the flame to low heat only.
• After 5-6 minutes, open the lid and mix well, add a handful of freshly chopped coriander leaves, check for the seasoning, your pithala is ready.
• Serve hot with hot bhakri and some onions, green chillies, thecha / kharda and some matka dahi.
For bhakri
Ingredients:
• Jowar flour 2 cups
• Salt to taste
• Warm Water as required
Methods:
• In a mixing bowl add jowar flour and salt mix well and add warm water as required to knead a soft and moist dough.
• No need to rest the dough like we rest other dough, you can directly start to shape the without resting.
• Divide the dough in small equal dough balls, sprinkle some dry jowar flour over the dough balls and flatten with hands and start to shape them in traditional way with hands by stretching it with your fingers and rotating it, I tried doing it but its not that easy as it looks, but still am trying, if you're not able to shape it with hands then you can use a rolling pin and shape it like a roti, sprinkle some flour when it sticks to the rolling pin. Do not keep the bhakri to thick or too thin.
• Once shaped, cook it on hot tawa and sprinkle some water over it, as the water dries flip and cook on other side as well until brown spots appear, cook it open flame, your hot bhakri’s are ready, pour some ghee over hot bhakri and serve it with hot pithala.

Pithala & bhakri is something I have had a lot & Akshay always used to tell me that the pithala at Sinhagad is epic & the best way to enjoy it is in monsoons, when you trek up & then enjoy that hot meal. So we once went there & tried this last year & I saw so many stalls selling some amazing, delicious pithala with freshly made Jowar bhakris. I happened to learn this from an old granny. She spoke Marathi & she explained every detail & I always thought that pithala is something so easy to cook, but a few details like the mixing of the kharda in the besan itself & that gives it such an amazing flavour kick. The way she made the bhakri was such a skill & i tried doing that so many times but could not match her experience. I have even tried making it in a similar way in the video but I am still learning. She said they add about 20% or rice flour in the jowar flour when they send it to the flour mill so that the bhakri is soft & does not crack, so you could do the same as well. Then she cooked everything on the wood fire. She served the pithala with some thecha, some onions, onion chutney & dahi set in earthen pots with some sugar. This is an experience not to miss & whenever things are right & you could travel, surely experience this very simple yet amazing meal. I will surely want to visit again soon. Until then try this recipe at your home. (P.S. You can prep the pithala with a consistency you like, I personally love it to be a little thick, also serve it as you cook, once you would leave it, it will start to set, so you will have to reheat & add some hot water. This recipe is what I have learnt from some one really experienced & was one of the best pithalas I have ever tasted. Also excuse me for my Marathi, I keep trying to be better at it over the years, I am sure I will ace it one day for sure)

My grandparents are from sangli and Satara, we lives in Mumbai since ages and we enjoy this recipe a lot, being a Muslim people(non maharashtrian) expect Biryani from us but i wish to treat them with Jawari ki roti and besan with thechaa.. 😋😋

*Bhakar cannot be rolled using roller(belan) because Jawari does not have gluten like in wheat flour. So it does not stretch like chapati. Almost every homemade bhakri is rolled using two hands just like my mother makes it*

@@ujjwalb2994 haha I'm from Ur neighboring state telangana which have influence of maharatrian cuisine ,n my mom is diabetic we altered her diet wid jowar roti and I learnt how to make roti wid hand but my mom uses rolling pin rolles out unevenly n cuts it out wid a small round plate for the perfect shape and it puffs up nycly n yes bhakri can be rolled out 😉

I'm from Dharwad Karnataka whose main cuisine is Pithala & bhakri which is known as junaka & bhakri in kannada..... It's both healthy & tastier..... especially with smashed green or red chilli chutney( hasikhara in kannada)& crushed onion(erulli)

A Bit Suggestion :- For the Appetizer Thecha - You can Roast it on a Tava With a Little drop of Oil. It really Enhances the Flavour also Add some Peanuts While Roasting.

I've had this in Lonavala in a very old restaurant where even though all the familiar foods were being served I wanted to try this never before dish!! Yes it's a dish for me considering I loved it so much I had 5 bhakris to the amazement of my Marathi friends who for some reason weren't a big fan of this. Also by the way you cook your foods it shows how much you respect the ingredients as well as cooking!! Keep learning 👍

Oh boy! I too went to Sinhgad fort with my cousins on a road trip and had this Pithala & bhakri over there in this very monsoon season where there a haunting scenario and fog and this dish was served hot with matki dahi..ohh my god! It was just perfect.. And of course seeing u making this just gave me a hard nostalgia ❤️ thank u Sanjoot😄 And of course the setup u had for making this reminded me of the village time and the plants OMG!😍

Waah waah mouthwatering. In Maharashtra every village has its own different recipe of pithala. Sometimes we add thecha directly in tempering sometimes instead of thecha we do plain pithala with buttermilk and having it with fried green chilli. Everyone made it differently ..

This looks watery, but many variations to the traditional recipe i guess :) The farmers would - Instead of making the batter, directly add besan etc while giving tadka, n over traditional chulha the taste is mind blowing, with releasing a little heated oil over pithala right before eating! Thanks Sanjyot for sharing a maharashtrian recipe, makes us fellow maharashtrians feel happy :) P.S- a big fan, all your recipes i follow turn out to be lip smacking :D

Yes yes I know and that lumpy pithla tastes so good. I was shooting in rural Maharashtra last year and an Aaji from a farmer family used to share her meal of that thick lumpy pithla with some Bhakri and it used to be mind blowing. I always believe that simplicity has it own glamour and the more rustic it is, even better. I have seen people topping it up with oil. Being a Maharashtrian by birth but a Punjabi by family tradition I would top it up with some desi ghee haha! Glad you liked the recipe and my work! Cheers!

I am from Maharashtra. And you have cooked this pital and bhakari is simply awesome. Didn't expect such Maharashtrian recipe you would try on your channel. One more thing there's so many ladies out there in Maharashtra who doesn't know how to make jawar roti but hats off you did it really well. Js want to share my experience. Few days back I had a get together at my place. Sir I tried your chicken do pyaza , matar paneer n shahi tukda recipe. Amazing experience. All my guests loved it. Especially the rabri in shahi tukda. Thank u sir fr making our evening special.

I am becoming die hard fan of ur channel..😀..born n brought up in Bombay ..although South Indian.. I make lot of maharashstrian dishes..Gajanan mharaj prasad is my most favorite and feels like heaven to have it..pithala bhakari is my favorite

My favourite,it's just a comfort food for me my grandmother mother makes the best pithla .Most ppl prefer jowar bhakri but I prefer rice bhakri

Hi, sir I am huge fan of your recipes. But when you pronounce पिठलं आणि भाकरी it's very heart touching because when nonmaharashriyan talks Marathi I like so much. So on Sinhagad Jai bhavani Jai Shivaji. Love kanda bhaji and pithal ani bhakti.

It's the dish that I leared from by one of the roomie in Ahmedabad. I must admit, it's an on the go yet tasty dish from Maharashtrian cuisine. I love it and my brother loves even more. We belong to Gujarati house hold yet cook it frequently like another Gujrati dish.

I visited Raigad once for trekking with my friends. We climbed all the way up in about 2 hours and we were starving. It was raining throughout this whole time and some of us got cramps. There are some houses there on top and we had pithala bhakri there and that's one of the most satisfying meal of my life. I am from Uttar Pradesh but I love food from Maharashtra. I have lived in Pune about 3 years and currently working from my hometown due to covid. I hope to go back to Pune soon.
