Candy corn has such a unique texture, it's one of my favorite textures for candy to have. If there was a sweet and/or sour lemon variant I think I would gain 50 lbs in 5 days.

The type of candy is called “mellow créme candy,” which I’ve seen attributed to either it’s mellow flavor or being a variant on “mallow” because of marshmallow as an ingredient. There are different ways of spelling it, but “Mellowcreme,” as one capitalized word, is trademarked by the Brach’s candy company. Originally the candies were known as “chicken feed,” because of the use of dried corn kernels in real chicken feed, and they initially became popular because their simple shape made them easy to produce and cheap, meaning children could often buy them for themselves with their allowance or first job money. There are other mellow creme candies made today, including variants of the “corn” in the form of triangles differing in color and flavor, as well as different shapes like the popular candy pumpkins.

I always thought the recipe for candy corn was this: sugar, high fructose corn syrup, corn syrup, glucose, honey, molasses, powdered sugar, brown sugar, palm sugar, dextrose, sucrose, cane sugar, coconut sugar, agave, maple syrup, pancake syrup, and then sweetened food coloring.

Professional confectioner and pastry chef here - A couple of notes. First, 230° is, indeed, hot enough to form the right dough texture, but if your thermometer is not calibrated correctly, even a degree or three off can screw up your formula. 245° is going to result in a harder corn dough, and the texture won’t be quite right when it cools and hardens. In working with sugar, temperature MUST be precise. I guarantee her thermometer was not properly calibrated. There are many videos on how to do it, depending on which thermometer you use. Calibrating is very easy, and we prefer the boiling water method over the ice water method, again, because it’s more accurate and quicker. In our kitchen, we always use instant read thermocouple-type thermometers, not glass candy thermometers. They’re much more accurate and safe. Next, sift your confectioners sugar before using (AFTER measuring), and start off with a strong wired whisk, then switch to a heatproof spatula to incorporate your sugar into the hot syrup. It incorporates the sugar much more efficientky and quickly. Then, throw on a double layer of latex or similar gloves, and it’s possible to use your hands to distribute the gel color much faster. Yeah, it’s a bit hot, but you get used to it, and the dough cools down fairly rapidly. It’s MUCH easier to manipulate while stillon the warmer side. Finally: NEVER cut ON your Silpat/silicone mat. Those little fibers inside it are glass threads, and VERY easily broken if pressed on, cut on or folded. ALWAYS remove your product from the mat to a parchment-lined cutting surface to slice. And NEVER fold, always roll, your insulated non-stick mats.

My favourite part of candy corn is the tips lol, I guess cos they’re thin, they’re more crunchy than chewy. Kind of like icing. And might just be my imagination but they also seem waxier and less sweet.

Hi Tammy, seriously, this is the best video about milk candy. I tried making it based on other recipes, they sounded so complicated and the end products were so sticky and I had to freeze it and eat it cold. I can't keep it at room temperature. Can't yours be kept at room temperature?

I made it this afternoon and used regular milk and mixed it with the sugar-butter mixture in the pot. After that was boiled I poured in the powered sugar on it’s own. It still tastes like candy corn. It’s really good!
