I like fresh red beets. But for those who don’t like red ones, try the golden beets. They have a milder taste than red beets. Or use a combination. 😊

Made the recipe. Enjoyed the taste so much. Very refreshing. I cut the large beets in half, sealed in foil, baked at 350 deg for 1 hr, scraped skin off and then sliced beets. Skin slides right off and easier to slice. Thanks again. Love your recipes.

Berta, do you also use quinoa? I love it but keep using same recipe which is only roasting onions and peppers then mixing into cooked quinoa...think I need something more lol.

I am looking at what else l do, Mars. Keep in mind that quinoa is just a grain so you can use it just like you would rice. Try beans over quinoa or even with steamed broccoli, shredded carrots, chopped onions, parsley and tomatoes topped with a bit of your favorite salad dressing. Be creative, Mars, with this grain. It will be fun. You can do this. Let me hear what you came up with🤗❤ Sorry for the delay in responding 😔.

Will deffo make this! I love beets----and what you warn us about doesn't seem to work with canned beets. I'd only had that kind for a few years-----got some fresh ones, and just cooked them. Ate a whole bunch----then noticed I was peeing pink. Took me a few minutes to figure it out! LOL

I love ABC salad...there are a lot of recipes floating around ...it is made up of raw cored apple with skin on and quartered, 2 medium raw beets peeled and quartered 2 raw carrots cut in 1 inch pieces..then throw in vita mix or food processor and chunk up to size of peas...empty in bowl and add: 1 Tbsp freshly grated ginger,,1 lime or lemon, juiced(I like lime), teaspoon of raw honey, 1-2 Tbsp olive oil, salt and pepper to taste.It is very forgiving...You can shred all veggies and apple....I put it in the refrigerator to blend flavors.. Actually you can add anything you want, Onions, or scallions, nuts, or even add some gorgonzola cheese... Makes me hungry talking about it. I love the crunch...And I know that I am going to have to try your recipe sweet and sour Beet Salad. While not a vegetarian I do love veggies...all kinds...and so good for us. Blessings
