Hi this is the first time I'm giving comment. For curdling milk add little amount curd so that curd will be soo thick. During summer I just dip a spoon into the curd then into the milk. U will get perfect thick curd. My mom thought me. U also try once

Another observation that I have made while setting curd is that if you use buffalo milk for curd, you will get thick curd compared to cow's milk. So, we use cow's milk for direct consumption in tea etc., for curd we use buffalo milk.
