The mean compound's (Sulpodines if I remember correctly) causing you problems are attracted to the moisture in your eyes. Simple Fix: Keep your hands wet, your knife's blade wet and your hands as well. Most of the "Mean" compounds will avoid your eyes as there is plenty of moisture near at hand. Just a simple trick I learned as a 14 year old boy from a French trained chef back in the early 1980's

II think if the dish used for marinating is oven safe, it could also be a oven/cooking pan (my family says oven pan but this may be a regional thing?). Otherwise tray, like you said, is right.

sitting in germany I bought the official shokugeki no souma cookbook. took ~2 month for deliver. all in japanese and perfect to learn reading japanese while cooking. In the book above all kanji are small hiragana chars so its easy to read.

If I remember correctly it's because onions contain enyzmes that breaks down protein. Honey also does the same thing.

Made the dish. One major substitution was the use of cauliflower rice. The wife has diabetes so our use of real rice is quite limited. Also the onion steak time was 24hours using a sweet onion. I think this was insufficient. So likely a stronger onion is required or perhaps some vinegar as well.
