In the Philippines, we also eat flat fish. Here are some of the popular fishes: Milk fish, tilapia, mackerel, red snapper, grouper, anchovy, yellow tail fusilier, yellow fin tuna, big eye tuna, and tawilis (which is now endangered huhu). We also like parrot fish, but since I learned that they are saviour to coral reef, I don't eat it anymore. I miss fresh seafoods in my country huhu. Everytime I go home, I only eat fresh seafoods haha especially sea grapes, eucheuma (guso), and lukot (sea hare eggs).

I'm really enjoying these cooking videos, thank you. I've recently started learning how to cook various Asian foods and I find Japanese to be some of my favorites just for the simplicity of the recipes and cooking methods. Regarding your question about fish, I live in Alaska, so lots of salmon, especially coho (silver), sockeye (red) and of course chinook (king). We also eat a lot of halibut, which is a type of flat fish. Most of the smaller flounder type flat fish get exported to Japan. Pacific Cod and pollock are also popular. I make cod by seasoning with salt, pepper and dill, then breading with panko and frying. I eat the freshwater grayling when I'm camping on the river occasionally too. Also, I didn't know about powdered dashi, I've been making my own using kombu and flaked bonito every time.

Honestly, beside the mistake with using the full length of the cutting edge, it looked really good. Very satisfying to watch and the result is mouthwatering. Funny you should ask about flatfish, we have three different ones we eat. One of which wasn't that popular locally, but fishermen saw opportunity when the Japanese showed interest in the fish (limanda limanda to Japanese limanda aspera (sorry I'm better at the latin names than Japanese)). I think generally for all three (bot, schol, schar) we usually season the fish with basic salt before coating it in flower, what you use for bread. Then bake in a pan, mostly served with potatoes and vegetables. I almost forgot another fish, one we call tongue, that's usually the prefered fish in restaurants I think. I never buy it, I'm not sure what kind of soup we make with it but I know we do. Long story short; 4 types of flatfish for the Dutch.

You're too humble, that looks amazing! Where I grew up in the Colombian Caribbean coast, the most commonly consumed fish are the Mojarra and Robalo (Snook). Usually deep fried whole and served with coconut rice and fried plantains. They will sometimes substitute the plantains with boiled Yucca, served with sour cream. For beverage they typically serve "agua de panela". It's a very sweet beverage made from cane sugar blocks diluted in water with some lemon juice, highly caloric.

In Puerto Rico you can eat chillo (red snapper) or dorado (mahi mahi) pretty much on every seafood restaurant. We eat it "al ajillo" which is a sauce mostly of garlic, butter, olive oil, oregano and other herbs to taste, or fried, with a side of tostones (fried flattened green plantains) or mofongo (fried mashed green plantains with oil and garlic, or breadfruit).

Yes, we eat a lot of flatfishes in Norway. Halibut (kveite), plaice (rødspette), flounder, monkfish (if that counts, called "breiflabb"), and a few more. As for what fish is popular, salmon is quite popular, but so is cod (salted or smoked are my favourites), the flatfish mentioned above, haddock, coalfish, the common ling, herring (especially around christmas. Northern Europe has a rich tradition for pickling herring), mackerel, and probably a whole bunch that I forgot.

The flatfish you showed looked something like flounder. In my country, we call it a rockfish, not to be confused with the spiny rockfish which has poisoned barbs. My family particularly like cooking it deep fried in a sweet-sour Chinese style sauce or in a sour soup base. Mm. I miss fresh fish. Edit: I googled stuff. Apparently theyre different fish, and the rockfish is the same venomous sort of rockfish. Gdi. I still love that fish, though.

orange roughy is so great! But it is very difficult to find in my area these days, (State of Virginia in the US) Cod & bass are very easy to find and can be prepared in so many different ways. So those would be my favorite fish aside from orange roughy. (Haven't seen a lot of catfish in my area in the last few years either, so that seems to be on the decline too.) We can buy halibut which is a type of 'flat fish' like yours probably. (We can find perch, trout, blue gill and those types too.)

To my knowledge, flatfish are mostly oceanic breeds, so they're not really available this far inland. We have freshwater lakes and rivers with some game fish: trout, pike, walleye, whitefish and yellow perch. It's common for them to have overly fishy or muddy tastes though. If we want to eat fish around here, it will probably come from a tin can or a freezer bag.
