伯爵茶戚風蛋糕,戚風是深受大眾歡迎的蛋糕技術一種,主要蛋白蛋黃分打法,只要蛋白打得好,蛋糕無煩惱,再配合英式皇室伯爵茶,可畏天衣無縫組合,今次用比EARL GREY更清新,更怡人的LADY GREY,注入橘子元素,味道更清新,做法不算太複雜,不妨去片看看
食譜
EARL GREY CHIFFON CAKE

EGG YOLK 4PCS
SUGAR 25G
WATER 45G
OIL 55G
CAKE FLOUR 70G
EARL GREY 5G
EGG WHITE 4PCS
SUGAR 35G
做法
1.將茶葉刨碎,跟麵粉倒在一起
2.蛋白蛋黃分開
3.蛋黃加入糖至溶解
4.加入水,油,麵粉(過篩)
5.蛋白打起,糖分兩至三次加入打至廷身
6.蛋白分兩至三次慢慢加入蛋黃漿
7.入爐180度(20MIN)
8.出爐櫈兩下反轉,待涼脫膜
小貼士
1.茶葉可倒一半刨碎會更容易
2.界面時,時間要快,放在室溫不夠熱會塔下,再焗不起

想請問一下6寸模嘅材料份量🙏🏻 另外想問下見有啲人方法會用奶煲咗啲茶葉先, 但你用水,同唔洗煲,其實有咩分別? 謝謝

用奶焗的時候相對易搶火,好快會轉深色,要小心控制,煲與唔煲味道沒有分別,兩者做法也可以,打成粉狀用的茶會相對小
