It had more diverse set of moves,better counter tactics and both were almost at their full strength. Lycanroc weakened Incineroar a good deal. Although Incineroar defeated Melmetal with relative ease,countering Melmetal brute strength with his own brute strength must have furthered the damage as well.

What does Greninja vs Charizard have that can make it better writing than Torracat vs Incineroar? Greninja and Charizard battling each other only because they're the ace of their respective team, there was nothing special between them.
