Thank you to everyone who has sent me the dictionary meaning of 'Mock' in Mocktail... I know what the meaning is. But I was referring to the endless mocking that I've heard over the years (often as behind the back whispers, and sometimes as full frontal attacks) of those people who choose for whatever reason to drink mocktails at parties and events. The double entendre of Mocktail is my reference point!

I'm no scientist but I think you should shake a cocktail with the metal tumbler side down, and the glass portion on top. That way it chills properly etc.

OK - but when shaking the cocktail the idea is that it move back and forth between the tin and the glass. Spending equal amounts of time in each; so I don't think science would back you up. But maybe someone with a PhD in thermo dynamics could clear this up.

Again, as someone who can't drink alcohol, I am so grateful that you are making these. As for the mock part of the equation, and being mocked for not drinking. I deal with it. I don't go to many parties because of my history. The idea that someone has to imbibe alcohol to attend a function needs to end though. It's a less than adult response to anyone. I don't drink often and when I'm driving, I don't drink at all. When I'm out with friends, I feel like I'm stuck drinking Diet Coke all night or ordering a Shirley Temple from the kid's menu. I wish more places offered something like this to try.

"stuck" is the wrong attitude. you get to remain sober, you get to behave like an actual adult, an adult who doesn't have to follow the crowd in order to impress lesser mortals, eg drunkards and other immature beings, like teenagers.

There should be more options then that if you ask, most of the time they don't stock non alcoholic stuff this is substantially more expensive then real alcohol.

I've tried Seedlip many times in restaurants mixed in their nonalcoholic drinks for a few years and started getting it in stores a couple years ago to really isolate what it was contributing. I don't like it much on its own, but it adds a ton of flavor to various juices. I think Garden is the most interesting one of the bunch. Good to see some more inspiration here. If people want to get chef-fy about nonalcoholic drinks, there's a book by the team behind Alinea called "Zero: a New Approach to nonalcoholic drinks" I bought a few years back with some recipes from their various restaurants. They have all sorts of drinks including a section with many drinks inspired by foods like barbecue, papaya salad, peanut sauce and a variety of techniques (like a few clarified milk punch drinks), etc. It really expands your boundaries of what a nonalcoholic drink can be. It's definitely not for the faint of heart, though. I believe there was a recipe or two that involved Seedlip. I just wanted to share because I know it's such an overlooked area and I hope other people broaden their perspective so we can share our thoughts and creations.

I just don’t understand the point of these, the point of cocktails is to make alcohol taste better there are already many great non alcoholic drinks and all of these drinks don’t need the alcohol substitutes they’re just nice herbal teas

I've been greeted countless times with 10+ page lists of wines, a few pages of cocktail offerings, suggested pairings underneath each menu item(or pairings altogether), and if I ask what is available that's nonalcoholic, the server 4/5 times will tell me "um, we have Coke and Sprite"

I never took the term mocktail to be making fun of people. It's more like a mock apple pie or mock cherry pie, you're just making a reasonable approximation without a key ingredient.

@@kyihsin2917 OK - but my experience differs. For example Julie and I are going to Dry January event next week put on by Bacardi to showcase some of their new alcohol free offerings. The mocking and derision of the idea of mocktails from some of the invited guests on social media has reached a fever pitch, and I'm sure at the event itself it will ramp up even farther.

I'm with you Glen. No one ever asks for a mocktail in fear of being ridiculed. Which people always make fun. In our area we don't ever hear mocktail anymore. Everyone just says N/A. Short, sweet, to the point and usually missed by listening peers because it's so short. I find it's usually those who have a problem with their alcohol, who belittle. 💚🌞

This is really nice, sir. I enjoy watching the cocktails after dark for the atmosphere and history, but as I do not drink by personal choice it is nice to find a recipe that I could see myself drinking. I do like the info from the usual cocktails after dark episodes, too, as both a history enthusiast and trivia game person. Thanks for another great episode.

Friends of a friend own a family farm in State College, PA and a while ago started making artisanal packaged goods from produce and fruits they grow, or purchase from other local farms and some market suppliers (for citrus fruits, e. g.). One product they make is bottled shrub in quite a variety of flavors (including exotic things like ginger, lime mint, rhubarb, and strawberry basil) which they sell online as well as to markets and hospitality venues in the Commonwealth and neighboring states. It really is a distinctive and refreshing taste, and they offer recipes for both alcoholic and nonalcoholic cocktails using different shrubs.

I saw something like these in an online store the other day. There were at least gin-like and vermuth-like non alcholic (some had under 0,5% of alcohol) substitutes and it made me wonder what they would be like to use. So this was a great video for me.

I'm loving this series Glen! I am just starting to get into the possibilities of these drinks and one thing I can say 100% is I HATE the ones that add capsacin to try to replicate the burn. Oh my god it's horrible to drink something that tastes like liquid smoke added to habanero juice. If anyone reading has brands that don't have that phony burn, I'm all ears. Thanks again!

There was a local-ish company that closed during pandemic, that produced a line of Flavored Drinking Vinegars that were outstanding. They were basically vinegar, simple syrup and flavoring, and had flavors like lemongrass, but my absolute favorite one was turmeric. I would make a non-alcoholic shrub with the drinking vinegar and sparkling soda. It’s been a couple of years now, and I miss it so much.

Very interesting about the apple cider vinegar/shrub. I had a coffee shrub from an indie coffeehouse here in St. Louis a couple of years ago and it wasn’t good at all. It was just way too acidic and overwhelming for me, something akin to a coffee flavored salad dressing.

Shrubs can be quite overpowering. If I am mixing shrub with seltzer, it's fine. If I'm mixing it in a cocktail, I use it as a sour enhancer. Not a substitute for all the citrus, and it certainly needs more sweet. Basically it's a complex sour ingredient.

These sound interesting. I’d love to see some mocktail recipes that don’t use a. Expensive specialty alcohol substitute, especially since it could be difficult to acquire for some people like those of us who don’t live in the states.

Don't know if it's available in Canada, but there is a product called "The Pathfinder" that I quite like. It hits more of an amaro note. I haven't tried it with another product like Seedlip - yet.

House of Love is a brand that makes non alcoholic mocktails. Tbh I have ordered a Shirley Temple and nobody batted an eye. It was my go to non alcoholic drink for awhile now I'm into soda water with a splash of pineapple juice. I hate diet coke (or any diet soda) which seems to be everyone's alternative to an alcoholic drink at a bar.

I find seedlip and all those non-alcoholic "spirits" strange. Alcoholic spirits are expensive because of all the taxes which non-alcoholics don't have - but the price is often even higher. I really don't get it.

It's essentially a bunch of extracts and spices/seasonings, which can get expensive. I'm sure they are overpriced even accounting for that, but it's a fairly niche "gourmet" market, which seems to let people get away with a lot.

Always prefer using teas to these kinds of fake spirits. Vastly cheaper and more available, and you can get a lot of interesting flavors in it from weirder stuff like lapsang. Frankly with the kinds of other flavors going on in this I doubt the Seedlip is even adding anything, all the other ingredients are so strong that it’s going to bury what’s just flavored water.

I wish there was a better name. I was vegan for a fairly large portion of my life and it bothered me that people assumed I ate "vegan whatever". I ate food. I was just picky about the food I ate :-) I tended to avoid things like "vegan cheese" because it's really a pale shadow of the original. In many ways, I feel the same about non-alcoholic cocktails. Alcohol is just such a better solvent than *anything* else that it's kind of pointless (IMHO) to create alternative versions of classic cocktails. They truly are "mock" cocktails, I think. They are a pale shadow of the original. But just like vegan food, there is no reason you can't make amazing non-alcoholic drinks. Like a cocktail, they can have powerful flavors. You can make them so that you want to sip 100 ml or so over a period of 20 minutes. But I don't think you can get there by emulating any specific alcoholic cocktail. Part of the problem is that non-alcoholic drinks are just more balanced and delicious and so it's hard to stop yourself from necking it in 30 seconds. Even your video today seems to indicate that your drinks suffered from that "problem" :-) My thesis is that we need to rethink and re-engineer a class of non-alcoholic drinks so that it serves the same purpose of a cocktail (relaxed exploration of powerful flavors over an extended period of time), but does it without using alcohol as a solvent. It's a *very* tricky problem!

Mock does not just mean to make fun of, it means to mimic, as in mocking bird; hence "mocktail" (even the spell check recognizes this as a real word) as in to mimic a cocktail.

Yes - there is the book definition of mocktail... then there is the mocking derision directed at those drinking a mocktail in a social setting. Which only gets worse as the night, and alcohol intake of the mockers gets longer.
