I went part time this week after working 38 years as a full time nurse. I’m loving it and only have to work two nights a week. I love zero waste videos and don’t believe in wasting food. Wasting food is like throwing your hard earned money in the trash. The brownies looked delicious and healthy.

I recently discovered that leftover pickle juice is an amazing marinade for chicken. It has the salt to brine the meat and the tart of the vinegar. It makes the chicken so moist and delicious.

My Mom always made extra mashed potatoes so we could have potato cakes the next day. I make them with Bisquick instead of flour. It makes them "puffier"!

Thanks. I’m of Hispanic heritage and I also make this dish without the ham. Make a light broth. Tomatoes garlic, onion, salt or a bit of Knorr chicken or tomato flavoring and cumin in the the blender In a pan add a bit of oil until hot add in mixture from blender let boil then simmer add in potatoe patties and let simmer so that all flavors combine. Serve with rice So good

Even the brownies, now I leave out the bananas causes John doesn’t like them but everything else I use but add apple sauce cause it helps keep it moist. It was okay till she did it to rhubarb dishes, I can still see my Dad puckering up. Lol Thanks for showing some ideas for leftovers, some great ideas. This is what we call 'Bubble & Squeak' in the UK....the Irish call it Colcannon; and it's all mashed potato with leftover vegetables and cheese etc. Absolutely delicious...i was brought up on this dish :)

Fruit salad, granola peanut butter walnut bars, calzone....salsa into spaghetti add spaghetti sauce for one dollar Hunts....potatoes patties little bits of deli meat and cheese or veggies or onions. Stir fry with rice uses up ham and veggies. Great video.

we're doing the no waste thing now. The crazyiest thing we do is smoothies. all our bananas are frozen before they spoil along with any other fruit. when we make the smoothie the fruit is blended with any left over unspiced rice, potatoes , and beans some juice and cold cereal or oat meal. We try not to be too weird.

Thank you for inspiring me on all your videos. Today I learned from you that you can freeze lemons. If he wants to go I got lemons and 10 cents a piece. I juice them and turn them all lemon juice that I canned . Now I can have them for recipes. As well as sticking some lemons in a glass for lemonade. Looking forward to your other videos

When I have bananas getting too ripe. I slice and freeze them for smoothies. The frozen fruit makes them nice and thick.

I love potato patties! My mom did the exact same thing every time there were leftover mashed potatoes and we would usually have them for breakfast. Sometimes she would also add cheese and diced ham, sometimes she would fry some finely diced onions and add them in with the potatoes. Super delicious. You're right, they aren't pretty, but so hearty and delicious. I'm not a fan of mashed potatoes, but I love mashed potato patties. Thanks for bringing that memory back, I may have to make some!

@@FrugalMoneySaver I just made the brownies..lol. I had some over ripe bananas too. They came out pretty good. A little more banana flavor than would've liked, but still they were very good. Paul was right that the bananas had kind of a funny/different flavor. Haaaa. I also substituted half an avocado for the melted butter and I used gluten free flour. The avocado was getting over ripe too. I was happy with the outcome. Not bad at all...and used up food that would've been thrown out. Thanks much. 😀

Some of our best tasting meals come from creatively using up food before it can go to waste. We waste so little food that we don't have much for the compost. It goes to the chickens and then we compost their waste for the garden. We use peanut putter in Thai inspired curry, usually with a can of coconut milk from the dollar store and all the leftover vegetable, chickpeas, and meat.

I called them doodlebugs! Yay! Another intro with Paul playing ❤ Ya'll are a bright spot in my week. And yes, your videos are encouraging. Our food waste has went way down since I found you. I wont lie..I still buy the big package of romaine and we dont always finish it before it goes bad. I'm learning to clean it, chop it and keep an appealing salad available though. I'm also popping things in the freezer before they spoil. It's amazing to have food at the ready when we need it. It's helping me be prepared for family meals. Who knew?! I have 2 pounds of bfast sausage browned and ready. When we have family brunch I can whip up a casserole with very little effort. I'm laughing ay Paul wanting more sugar in the brownies 🤣 You're so good Emmy. The rest of us need to cover up the healthy haha. Love ya'll so much! Thank you for brightening up my week. I dont think either ofnyou realize what a blessing you are and how many people you encourage. Life is hard for many people and your positive and loving attitude makes a difference!

Hi Emmy and Paul. This video was a treat ... Paul playing, Emmy doing a food waste video and recipes, and finally, a cameo by Dixiebelle. Those potatoes pancakes looked amazing. A hint if you don't have sour cream ... use plain Greek yogurt. I'll eat the sour cream, hubby uses the plain Greek yogurt. It's an ok substitute ... healthier but not quite as tasty. The next time we have mashed potatoes, I'm going to make extra so I can try the potatoe pancakes. Hope you are feeling better, Emmy. Have a great weekend.

For the brownies- just a few drops of Hershey’s syrup on top and Paul will get his sweetness in and you could just use less. A compromise learned after 30+ years of marriage!

Wish I was there to help you eat them, but it's a long drive so will have to wait until tomorrow. Had potatoes for supper so I know what tomorrows lunch is. Lemon meringue pie! I put chocolate chips in banana bread but the cocoa and peanut butter sounds and looks yummy. Learned a lot tonight.

Emmy thanks for sharing the snicker apple salad are friends loved it. I had some over ripe bananas so I made banana bread for hosting us for dinner. She texted me this morning to tell me how good it was with their coffee. She is not a baker so they appreciate when I bring a baked gift. Love your channel content❤️

Sometimes I have used leftover salsa or marinara sauce in meatloaf instead of catsup for different flavors. Pickle juice makes a great marinade for chicken. I love your videos Emmy!
