Hi dear! Best recipe ever!!! I just made it and it turned good just like in the pastry shop . I tried a lot but never succeeded. It happens that I came across yr video and saw the differences between others about the icing. Hello... we never tried adding glycerine in the icing for napolitaine as it will prevent the icing to dry. The icing needs to be hard and dry and usually there is no crack even after few days. Let us know if you have any question 🤗 Thanks for watching ❤️

Sorry for the late reply. I'm not sure if we have butter sticks in Mauritius. We are based in Canada. The butter we are using is mainly for baking. But you can use any unsalted margarine.

Sugar with a bit of corn starch... around 1 cup of granulated sugar + 1 TBSP cornstatch. Use a spice grinder to blend until the mixture is powdery

Bjr, pour le glacage, pour qu'il soit pas transparent comment vous faites ? Je suis obligée de mettre deux trois couches de glacage, c'est gaspillage...

Bonjour, le glaçage doit être plus épais, si c'est trop liquide ce sera transparent. Pendant le processus du bain marré (ne pas mettre beaucoup d'eau car le glaçage sera plus liquide lors du bain marré, donc ne pas le faire devenir liquide avant le bain marré), il faut melanger continuellement jusqu'à ce que le glaçage ait la bonne consistence puis le verser tout de suite sur les biscuits sinon le glaçage va durcir. Vous pouvez comparer la consistence de votre glaçage à celle sur la vidéo. N'hesitez pas si vous avez d'autres questions 🤗

Hello 😀 you meant top? If your icing is made with too little of water, this could be causing your icing to be too dry and therefore crack. Also when you remove the icing from heat, immediately pour onto the cookies. If you see that a layer has formed on top before your pour it, put back on heat 😊😊

Hello, we used icing colours (colorants à glacage - should be written on the package). Unfortunately we don't know any specific shop in Mauritius where you can get it nor the price. maybe you can try at the supermarkets in the pastry shelves or any shop specialized in selling pastry stuffs 😊

Hi Nil Jee, in that case you have to divide / measure all ingredients by half: Ingredients: 125 g all purpose flour (sifted) 87 g soft unsalted butter (room temperature) 40 g strawberry or raspberry jam For glazing: 125 g icing sugar 1 - 2 TBSP cold water Food colouring (Any preferred colour) Few drops of lime juice

Hi, yes you can... however the taste might be different because of the salt 😀 but we recommend to use unsalted butter for pastry 😊

And I know for fact napolitaine for some reason is more successful recipe when I use margarine too , but here u have been saying butter it’s not butter for non Mauritian viewers if can be a problem . I share ur recipes with my coworkers and they mentioned this to me as they used actual butter sticks and their recipe wasn’t as desirable . Pls don’t take my comment in a wrong way Koz I love love love ur videos .

Hi, we used the brand Becel (unsalted margarine) especially for baking. Pastry margarine are more soft and mixes easily. Not sure what brand are available where you live but any pastry margarine (unsalted) will do. Thanks for watching 😊

Normalement quand il y a moins de farine, on met moins de beurre.. sinon les biscuits risque de se brissés facilememt.
