My opinion if you use both , the meat texture is slightly more smooth and juicy. ( don’t use too much baking soda though, it destroys the natural meat favorite and texture)

Thank you for your input. I have used both before when marinating meats (usually pork and beef). They have come out tender and juicy. I appreciate the information about too much baking soda.

@@regidwight Myself would prefer just using CORN STARCH along with some dark/light soy sauce, oysters sauce, bite of sugar and pepper. Add this liquid mixture to meat first by stirring, then add sesame oil to seal up the meat juice. The coating oil also helps easier to brown up 有wok氣without using too much oil and helps prevent pan sticking. The above Corn Starch mixture will be enough to tenderize and add good flavor, to those higher quality meat. ( but for much tougher meat do need baking soda though) I make my brown sauce with the above mixture + water/clear broth too 👌

I have seen your programs for over a year and learned so much of cooking skill. most people think I am a expert but learn it from you channel ( your stundent ). If you can tranlate to other languages whole world can learn Hk cooking
