材料:
黃油雞1隻(約2公斤)
豬肝150g
冬菇4粒(切厚片)
配料:
蒜頭8粒
紅蒽頭8粒
薑片8片
洋蔥角150g,(蒽段80g後加)
調味料:
柱侯醬1湯匙
蠔油1湯匙
生抽1湯匙
砂糖半茶匙
廚酒1湯匙,(玫瑰露酒1湯匙後灑煲蓋面)
做法:
1)雞斬件(可去骨) 用半茶匙,廚酒1湯匙,生粉1湯匙,胡椒粉少許攪拌後醃15分鐘
2)熱鑊下油煎雞件約六成熟後加配料炒出香味,再加入調味料、豬潤(廚酒1湯匙,生抽半湯匙,生粉1湯匙,花生油1湯匙)
3)熟冬菇片煮至收汁加蒽段後即成
